Last week was our youngest daughter's birthday and we had planned on going to Miller & Carter. As we are in lock-down I boldly said I'd recreate her Steak dinner, I mean how hard could it be? She told me she always had their onion loaf but it wasn't like a bread loaf...now I've never been to Miller & Carter so I had no idea about their Onion Loaf so had to do some research and devise my own recipe. 6 white onions, sliced and separated into rings 1 cup milk 3 eggs, beaten salt, to taste 2 cups pancake mix Combine milk, eggs, and salt in a mixing bowl. Soak the onions in this mixture for about 30 minutes. Place pancake mix in a shallow bowl. Heat oil for frying in a heavy skillet to 375 degrees F.
