Try this deconstructed version made with housemade Aperol Caviar.⁠ ⁠ APEROL CAVIAR⁠ Created by Lorenzo Amati (@stasera.cucina.lo.chef)⁠ ⁠ 100 ml @AperolUSA ⁠ 1 gram Agar Agar⁠ 1 Glass Cold Vegetable Oil⁠ ⁠ Combine Aperol with Agar Agar over medium low heat until it thickens. If the Aperol is not thickening, add .1 gram Agar Agar. Add mixture to a squeeze bottle and drop into a glass of chilled oil.
