For Chocolate Coconut Cake
3/4 cup softened butter
1/4 cup brown sugar
1/2 cup condensed milk
1 tsp vanilla extract
1/2 cup desiccated coconut
1/2 cup dark chocolate chips
1 cup milk
1 1/2 cups plain flour (maida)
1 tsp baking powder
1/4 tsp baking soda
melted butter for brushing
plain flour (maida) for dusting

  4. Add plain flour, baking powder and baking soda. Fold in gently using a spatula.
  5. Pour into a 8" x 3" greased and dusted loaf cake tin.
  6. Bake in a pre-heated oven at 180°c (360°f) for 25 to 30 minutes, until the cake is golden brown in colour or a knife inserted in the cake comes out clean.
  7. Once baked, remove and loosen the edges of the cake using a knife. Demould and cut the cake loaf into 12 equal slices.
  8. Serve eggless chocolate coconut cake.
