It’s tomato season guys so make the most whilst they’re at their best. This also works really well with slightly-past-their-best toms so save for later when you need it.

Protein breakdown:

Beans: 31g
Tofu: 34g
Nooch: 8g
Miso: 4g

Total: 77g
/2 = 38.5g

Ingredients

1/2 an onion, finely chopped
5 cloves garlic, crushed
1 tbsp tomato puree
3-4 large tomatoes, chopped
2 x 400g tins of butterbeans
Small handful of torn fresh basil
250g firm tofu - I used tomato flavoured @taifuntofu but if you can’t find this, just use firm tofu and add a bit more tomato puree and salt
3 heaped tbsp nooch
2 tbsp white miso
Splash of water

To serve:
More fresh basil
Extra virgin olive oil

RECIPE (4 servings 50min prep time):
Sauce:
-1 onion
-3 cloves garlic 
-a thumbsize piece of ginger 
-1 small apple
FRY in 3 Tbsp vegan butter
-4 Tbsp flour
-1 1/2 Tbsp curry powder
-1 Tbsp tomato paste
Stir it in
-650ml water 
-1 Tbsp each soy sauce, ketchup, agave or maple syrup
-salt to taste
Simmer for around 10mins and then blend until smooth. Taste test and add more seasoning if needed.
Tofu katsu:
-2x 200g tofu
Cut in filets
-4 Tbsp corn starch with salt, pepper and paprika
-5 Tbsp plant milk
Mix.
-panko breadcrumbs
Bread the tofu and fry in oil until crispy.
Quickles:
-1 small cucumber
-1 red onion
-a handful of cilantro

Ingredients (serves 4) 
2 tbsp olive oil 
1 carrot, finely chopped
2 celery sticks, finely chopped 
1 red onions, finely chopped 
4 garlic, minced 
2 tbsp balsamic vinegar 
2 tins plum tomatoes
1 vegetable stock cube
1 tsp sugar 
2 bay leaves 
1 tbsp mixed herbs 
1 tbsp smoked paprika
2 tbsp tomato purée 
1 tbsp soy sauce
50ml oat milk 

For the shredded tofu meat 
1 block (220g) extra firm tofu 
1 tbsp soy sauce 
2 tbsp olive oil 

To serve 
350g pasta 
Fresh parsley, chopped
Handful of walnuts 

1. Preheat the oven or airfryer to 190c.
