Strawberries Everywhere

Strawberry season has been in full swing and right now they are plump and sweet. It's a perfect time to make a Strawberry Pie!

The original recipe called for "Wild" Strawberry jello, but it's no longer available. So here is my version.

Cast of characters includes -

Fresh Strawberries
Strawberry Jello (large package)
3 Tablespoons cornstarch
1 cup Sugar
1 1/2 cups water

Combine cornstarch, sugar and water. Cook over medium high heat - stirring constantly until thick and bubbly. Stir in 3/4 package Strawberry Jello and remove from heat. Let cool.

In a deep precooked pie shell, layer washed and hulled strawberries. Pour Jello mixture over strawberries making sure all the strawberries are covered. Refrigerate.


Serve with a dollop of Whipped Cream

Enjoy!

Early American history

This spring, my hubby and I traveled to New Bern North Carolina. There were lots of interesting places to see as it is a very old part of America.

From Wikipedia -

New Bern was first settled in 1710 by Swiss and German Immigrants. It was named after the capital of Switzerland, Bern. The first permanent seat of the colonial government of North Carolina was located in New Bern. Following the American Revolutionary War, New Bern became the first state capital.

Tryon Palace was completed in 1770 and was the former house of British governor William Tryon.

It then became the original state capitol building of newly-independent North Carolina and remained so until the 1790s, when it burned down. A replica, built from the original plans and on the original foundation, is now maintained as a historic site and tourist attraction. During the 1800s Federal period, New Bern was the largest city in North Carolina. New Bern recovered after Raleigh took its place as the state capital with the help of trade routes to the Caribbean and New England. It reached a population of 3,600 in 1815.
New Bern was the site of the Battle of New Bern early in the American Civil War in which the town was captured and occupied by Union forces.

New Bern is a neighboring town to Bath, NC.

Bath was North Carolina's first capital and port of entry. Bath is North Carolina's oldest town, celebrating its 300th anniversary in 2005.
