1 large zucchini, cubed
1 cup mushrooms
3.5 cups homemade vegetable broth (made with approved vegetables)
4 cups watercress or any other approved greens, chopped
2 cups quinoa
½ cup walnuts
1 Tbsp onion powder
1 Tbsp dried sage
2 sprigs of fresh thyme
