Nina Roofe, PhD, RDN, LD, FAND, earned the Bachelor of Science degree in Home Economics with an emphasis in Dietetics from the University of Central Arkansas. She completed the dietetic internship at the University of Arkansas for Medical Sciences and began a career in clinical dietetics and management. While directing the Outpatient Nutrition Clinic at St. Francis Health System in Tulsa, she completed the Master of Science degree from the University of Arkansas at Fayetteville in Corporate Health Promotion. Dr. Roofe has consulted in various capacities throughout her career including psychiatric hospitals, long-term care facilities, and privately for families of children with autism and food allergies. In 2010, Dr. Roofe earned the Doctor of Philosophy degree in Family and Consumer Sciences Education from Iowa State University. She has taught dietetics students since 2002 and is currently an Associate Professor and Chair of the Department of Family

Ef... more Current research documents an increasing prevalence of pediatric obesity in the United States. Effective nutrition education programs are needed to affect this trend. This study pre-tested and post-tested kindergarten students and their families to evaluate the impact of a service learning nutrition education program. Changes in nutrition knowledge and home environment among kindergarten students and their parents who participated in a nutrition education program (treatment group) were compared with those who did not participate in the program (control group). The nutrition education program was developed and delivered by senior nutrition majors at an accredited 4-year university. Responses from a total of 156 parents and kindergarten children (treatment n = 79, control n = 77) out of 205 total kindergarten families (76% response rate) were analyzed to compare changes in knowledge and home environment. Results indicate an increase in the kindergarten children's knowledge and a decrease in the family's home obesigenic risk. These results provide support for the use of service learning to provide age-appropriate nutrition education programs to benefit the entire family.

Participation in an Interprofessional Health Fair: Student Perceptions of Teamwork and the Role of Faculty

INTRODUCTION Development of interprofessional skills is increasingly recognized as a critical com... more INTRODUCTION Development of interprofessional skills is increasingly recognized as a critical component in the preparation of health professionals. The purpose of this study was to evaluate the impact of preparation and participation in an interprofessional educational experience on health professions students' perceptions of teamwork and communication skills. METHODS Survey responses from students (n=120) with different levels of involvement in an interprofessional health fair were analyzed. Levels of involvement included four groups: a control group, a peer instruction group, a faculty instruction group, and a group who was involved in both planning and implementation of the health fair. RESULTS The analysis demonstrated faculty-guided preparation prior to participation in an IPE experience is crucial for optimizing students' abilities to work as a team. CONCLUSION Implementation of an interprofessional health fair can positively affect students' perceptions of working as a team. However, a lack of faculty-led training can negatively impact the IPE experience for the student.

Background/Objectives: This study evaluated the impact of switching exclusively formula-fed infants with caregiver-perceived intolerance to partially hydrolyzed 100% wheybased formula (PHF-W) with Lactobacillus reuteri. Methods: Infants identified as 'very' or 'extremely' fussy by caregivers were eligible for this single-arm, single-blind study. Subjects were switched from their current formula to study formula for 3 weeks. Gastrointestinal tolerance was assessed by the Infant Gastrointestinal Symptom Questionnaire (IGSQ) at baseline and end of the study. Caregivers ranked their infants' fussiness (not at all, slightly, moderately, very, extremely) after the first three feedings of study formula and 24 hours after enrollment. A paired t-test was used to compare the change in IGSQ score, and the Wilcoxon signed rank test was used to compare post-feeding fussiness scores to baseline. Discussion: Positive engagement with this channel and substantial exposure during the 8-month trial period suggest YouTube is a feasible and sought after platform for nutrition support education. Further investigations will include surveys on viewer demographics and desired video content to increase platform engagement.

Development of both hard and soft skills is part of the FCS curriculum and can include critical skills necessary to perform tasks required on the job as well as skills needed to communicate and work well with others (Professionalism, 2018). The development of professional behaviors in students begins in the classroom but the process of learning and growing, both personally and professionally, continues as students advance to complete their education. Often students participate in capstone experiences to refine appropriate professional behaviors relative to their discipline. This paper reviews the importance of professional behavior development in FCS students and offers insight into lessons learned when educators at a southern university assessed the professional behavior education in their curriculum.

Statistics from the Accreditation Council for Education in Nutrition and Dietetics (ACEND) reflec... more Statistics from the Accreditation Council for Education in Nutrition and Dietetics (ACEND) reflect that from 2001 until 2009, an average of 66% of didactic program in dietetics (DPD) students successfully match to a dietetic internship (DI). However since 2007, the percent of students who successfully match to a DI has declined. According to the 2014 data, there were 5140 total applicants for 2,836 available positions. In that same year, there were 2491 matched and preselected applicants for a 51% nationwide match rate (1). An increased emphasis on disease prevention, a growing and aging population, and public awareness of diet and disease implications point to an expected increase in the need for CDR-credentialed dietetics practitioners (2). Previous studies indicate cumulative and sophomore grade point average (GPA) and work experience are predictive of acceptance into a Dietetic Internship (3,4). This article aims to identify current predictors of success and strategies to improve student outcomes by surveying DI and DPD Directors and educators. The intent is to arm students with the information and experiences they need as DPD students to position themselves for success in their dietetics careers. Service learning experiences at the undergraduate level can potentially increase competitiveness in a dietetic internship match. The importance of service learning in relation to successful student outcomes will be discussed.

This study evaluates the success of the American Association of Family & Consumer Sciences (AAFCS) Leadership Academy measured by participant benefits, the influence on participants' personal and professional satisfaction, and changes in leadership roles within AAFCS before and after participation. A 33-item web-based questionnaire was sent to AAFCS Leadership Academy participants in cohorts from 2013, 2015, 2017, and 2019. Results showed that the respondents found the AAFCS Leadership Academy beneficial in developing personal and professional leadership skills that enabled them to serve in a leadership role related to employment (73%) and in enhancing their career path or goals (73%). The findings further revealed that respondents reported increased levels of personal (73%) and job (50%) satisfaction as well as increased capability in personal empowerment, networking, and service within AAFCS. The need for strategic planning to ensure future leaders led to the development of the American A... more The need for strategic planning to ensure future leaders led to the development of the American Association of Family & Consumer Sciences (AAFCS) Leadership Academy. Leaders envisioned an approach to identify and strengthen future leaders from within the organization. Based on transformational and servant leadership precepts, the Academy includes a proven curriculum, mentorship, and projects at the affiliate and national levels to develop leadership skills of participants. The skills learned in the Academy are applicable in all family and consumer sciences (FCS) settings and beyond including, but not limited to, secondary and higher education, business, research, and Cooperative Extension. The development process of the AAFCS Leadership Academy serves as a best practice model for professional leadership development.
