Nina Roofe
Nina Roofe, PhD, RDN, LD, FAND, earned the Bachelor of Science degree in Home Economics with an emphasis in Dietetics from the University of Central Arkansas. She completed the dietetic internship at the University of Arkansas for Medical Sciences and began a career in clinical dietetics and management. While directing the Outpatient Nutrition Clinic at St. Francis Health System in Tulsa, she completed the Master of Science degree from the University of Arkansas at Fayetteville in Corporate Health Promotion. Dr. Roofe has consulted in various capacities throughout her career including psychiatric hospitals, long-term care facilities, and privately for families of children with autism and food allergies. In 2010, Dr. Roofe earned the Doctor of Philosophy degree in Family and Consumer Sciences Education from Iowa State University. She has taught dietetics students since 2002 and is currently an Associate Professor and Chair of the Department of Family
