A nutrição surgiu no início do século XX, é uma ciência nova que vem obtendo grande destaque dent... more A nutrição surgiu no início do século XX, é uma ciência nova que vem obtendo grande destaque dentre as profissões da saúde. Em 1940, ao surgir a profissão de nutricionista no Brasil, as áreas de atuações eram restritas à Nutrição Clínica e Alimentação Coletiva. Com o passar do tempo, devido à expansão dos cursos de Nutrição e consequentemente ao grande número de profissionais, o campo de trabalho tornou-se mais amplo e diversificado, sendo que atualmente o nutricionista pode exercer atividades em sete diferentes áreas: Nutrição Clínica ou Dietoterapia, Unidades de Alimentação e Nutrição, Nutrição Coletiva ou Social, Docência, Indústria de Alimentos, Nutrição Esportiva e Nutrição e Marketing. O objetivo deste trabalho é conhecer a característica da atuação profissional de ex-alunos do curso de nutrição de uma universidade do interior paulista e caracterizá-los relacionando-os com o mercado de trabalho. O objeto da pesquisa foram ex-alunos do curso de Nutrição formados nos anos 2005, 2006 e 2007. Dados sobre o peso e a estatura e sobre atuações profissionais foram coletados por meio de um questionário com questões abertas e de múltipla escolha enviado pelo correio aos participantes. Dos 211 egressos entre os anos de 2005, 2006 e 2007, apenas 55 (26%) responderam ao questionário sendo que 85,5% deles relataram atuar na área da nutrição. Para os que atuam na área de nutrição, 58,2% têm atividades em apenas uma área e a maioria dos nutricionistas está atuando em Nutrição Clínica e em Unidades de Alimentação e Nutrição (59,6% e 53,8%, respectivamente), outros 9,6% exercem a profissão em Nutrição e Saúde Pública, 9,6% em Docência e Pesquisa e apenas 1,9%, em Nutrição e Marketing. Os contratos de trabalho representam para 32,7% dos nutricionistas, uma carga horária superior a 8 horas/dia. Em relação à satisfação profissional, 74,5% relatam estar satisfeitos com sua atuação profissional. A pesquisa proporcionou uma análise ampla do perfil de atuação dos ex-alunos de Nutrição de uma universidade do interior paulista, possibilitando através das informações obtidas desenvolver uma relação entre o mercado de trabalho atual e a característica de atuação dos nutricionistas recém-ingressos neste mercado.

Bacillus thuringiensis can be produced by a fermentative process using agro-industrial residues a... more Bacillus thuringiensis can be produced by a fermentative process using agro-industrial residues as substrates. The culture medium in solid state fermentation (SSF) is composed by moist nutrients. The water is a limiting factor in the SSF, differently from that in submerged fermentation. The solid culture medium must have a minimum moisture content to allow microbial growth but the concept of water availability in the substrate is best explained in terms of water activity (Aw). This study investigated the water activity influence on the solid state fermentation of Bacillus thuringiensis using rice husk, bran and grits as substrates. Three culture media were tested: (i) rice grits; (ii) rice grits and rice husk; (iii) rice bran and rice husk. In order to study hygroscopic characteristics of each medium, isotherms were constructed. For each culture medium, two processes were carried out: one with low Aw and the other with high Aw. The fermentations with B. thuringiensis were made in plastic bags containing the culture medium. The results showed differences in productivity. The best results were obtained for the medium composed by rice grits. The productivity ((spores/g medium)/h) for the process using initial Aw of 0.620 was 3.0 10 4 and for the initial Aw of 0.965 was 1.0 10 6 .

The food industry produces a series of residues of high value of (re)utilization. Many works study the residues bioutilization such as the crushed sugar cane for protein enrichment of animal ration. In this work it will be presented a study of a possible usage of the crushed sugar cane for the production of Spirulina with satisfactory protein increment results when compared with other results gotten in literature. The genus Spirulina of the family Oscillatoriaceae comprises the group of multicellular filamentous cyanobacteria (blue-green microalgae). Spirulina is used as fish feed in aquaculture, as a food supplement, a source of vitamins, pigments, antioxidants and fatty acids. Therefore, its growth parameters are extremely important in studies of the development and optimization of bioprocesses. For studies of biomass growth, Spirulina platensis was cultured on solid medium using sugarcane bagasse as a support. Solid state fermentation or cultivation (SSF) involves the use of a culture medium composed of solid material with given moisture content. No studies have been published about the cultivation of microalgae or cyanobacteria on solid medium. Furthermore, although sugar-cane bagasse is used as source of energy in alcohol distilleries in Brazil, the excess could be a support to photosynthetic microorganism growth. The experimental design methodology was used to evaluate the protein production by Arthrospira platensis under SSF using sugarcane bagasse as support, taking into account the moisture content of the medium, light intensity and inoculum concentration. Moisture was found to have a strong influence on the performance of the process. The best conditions were: moisture of 98.8%; inoculum concentration of 0.15 g biomassÁkg wet culture medium À1 and light intensity of 6.0 klx.
