They are quick, easy, and are a great way to add some additional protein to your breakfast, or to your lunch as sandwich bread.  Cottage Cheese Protein Bagels  2 cups unbleached, all purpose flour (or gf flour) 4 teaspoons baking powder (make sure it’s fresh) 1 teaspoon kosher or sea salt 1 pint or 2 cups 2% cottage cheese 2 tablespoons water For the topping: 2 eggs whites, beaten  Everything but the Bagel Seasoning (Trader Joe’s is great) Cinnamon & sugar   In a large bowl, add the flour, baking powder, and salt and whisk.  Add the cottage cheese and water and mix until well combined - it will look like small crumbles.
