carol ravagnani on Instagram: "For that super crisp pipping - part from practice of course - getting the temperature of the buttercream right is key.

The first flower was piped with the buttercream at 26°C. The buttercream is soft, and there’s not much control over the precision of the petals.

The second flower was piped with the buttercream at 19°C. At a lower temperature, the piping becomes easier, crisper and more delicate.

It is the same buttercream recipe; the only difference between them is 2 minutes in the freezer.
