Hillary \\ Tello and Rose on Instagram: "Gingerbread Cookies. I happened to be on a George Washington rabbit hole (🤓) after visiting DC and was able to get in contact with @mount_vernon. They were kind enough to send me the original gingerbread recipe written by the Superintendent of Bakers for the Continental Army, Christopher Ludwick. I made two changes as our taste buds are a little more sensitive than the Continental soldiers. 😅 They are delicious and taste like the cinnamon cookies from Trader Joe’s. Random thoughts below the recipe… 3 cups all-purpose flour 1 cup brown sugar 1 cup butter ½ cup cream 1 tbsp ground allspice (I did 1/2 TSP) 1 tbsp ground ginger 1 tbsp ground caraway seed (I substituted equal parts cinnamon) 1 tsp baking powder . Crust 1 cup unsalted butter 1/2 cup powdered sugar 1/2 tsp. salt 2 cups all-purpose flour Lemon Filling 4 eggs beaten 2 cups granulated sugar 1/2 tsp. baking powder 1/4 cup all-purpose flour 1/3 (1/2 if you are a lemon fan) cup lemon juice zest of one lemon �- Preheat oven 350F. Combine sugar and butter, add rest of ingredients and press into a parchment lined 9x13. Bake for 15-20 mins until cooked through but not brown. ��- Meanwhile, whip eggs and sugar together. Add rest of filling ingredients and pour over cookie base. Put back in the oven and bake for another 20-25 mins until set. ��- Let cool completely then dust with powdered sugar."
