The goat fry is essentially very well seasoned and perfectly balanced goat meat that is slow cooked and simmered till it is almost dry. From my recipe search people sometimes use goat that is already cooked for the recipe, or at times, omit tomatoes. I found that a single tomato added a nice bit of acidity to balance out the dish!
