Try these easy, creamy Marmite & parmesan butter beans for a delicious breakfast, brunch or lunch 😍.

Quick to prepare, they will keep in the fridge for up to 3 days and can be reheated so are perfect for meal prep.

Recipe (serves 2):
🖤 Add a 400g tin of butter beans to a pan, including the liquid in the tin.
🧀 Add a pinch each of salt & pepper and 1/2 tbsp Marmite, then bring to a simmer over a medium heat, stirring regularly.
🍞 Once the liquid has reduced by half, add 30g grated parmesan & 1 heaped tbsp soft cheese, then mix well.

🌱 1 tbsp soy sauce, or tamari (see notes)

🌱 1/2 vegetable stock cube
🌱 4 tbsp tahini
🌱 150g (2/3 cup) vegan yoghurt, see notes

Ingredients (serves 2)

For the beans

2 tins butter beans, drained
4 garlic cloves
1/2 a leek
80g cavolo nero (or kale)
400ml vegetable stock
1 tsp mixed herbs
1 tsp cumin
1 tbsp nutritional yeast
Juice of 1 lemon

For the breadcrumb

1 garlic clove, minced
3 tbsp panko breadcrumbs

Method

1. To start, make the breadcrumb. Fry the garlic in a drizzle of olive oil for 30 seconds then add the breadcrumbs & toast until golden. Season to taste then set aside to cool
