This soup is mandatory to have in your back pocket for soup season bc you just never know when you wake up with the sniffles and need a pick me up.

Y’all know we love rice over here, so I paired it with a homemade Mexican rice, which leveled up the flavor even more.

What you’ll need to make Caldo de Pollo: (Ingredients)
4 lbs bone-in chicken thighs and drumsticks
4 bay leaves
2 whole cloves of garlic, peeled
1 large onion, halved
2 tablespoons chicken bouillon powder (adjust to taste)
1 small can of Mexican-style tomato sauce

My husband is Latin so I try to make dishes he grew up eating and I also want our girls know their culture. The recipe is really easy, healthy and all in one pot. Start with a big pot of water, add 3 chicken thighs and 3 chicken drumsticks. Boil for 15 minutes and skim the foam from the pot. Then blend 3 Roma tomatoes, half an onion and 4 garlic cloves with 1/2 cup of water and pour the blended mixture into the pot and simmer for 15 minutes. And to save me time waiting hours for chicken stock my not so secret ingredient is adding 2 tbsp of Knorr chicken bullion.
