Clean and cut the zucchini into chunks and blend into a smooth purée. Add oat flour and baking powder and mix gently to combine, make sure not to overmix the batter. Spoon ⅓ of the batter onto a hot nonstick pan, then use a spatula to spread the mixture and flatten it to a large sized flatbread with a thickness of about 2 to 3 mm. Cook over low-medium heat until the edges are dry (about 2 minutes). Carefully flip and cook the other side for an additional 1 or 2 minutes, or until golden brown and cooked to your liking.

1 cup (80 g) rolled oats
