Our great-grandparents used canning to preserve their harvest and feed their families through the seasons. My great-grandma had a room of jars to the ceiling because she had children to feed through the harsh winters, what an inspiration! As the years passed, we became dependent on the grocery stores to feed us. Grocery stores ARE NOT reliable. Whenever there is an emergency or a possible emergency or fear brewing…they are wiped clean and the lines are out the door. You have fresh, soft, tasty brown sugar. I’ve had this bottle of molasses for over two years now, and it seems to never run out and has saved me trips to the store by allowing me to make homemade brown sugar in a pinch. To be honest, if I a recipe calls for brown sugar now, I just add the amount of sugar + amount of molasses that would equate to the brown sugar needed. I don’t generally mix it like this except for during the holidays when I make a big batch to have on hand when I’m baking! For smaller recipes, I just measure with my heart.
