Trim off extra fat from lamb rack. Cut the lamb rack into individual chops. Pat them dry with paper towels, then place into a dish. Season by adding the minced garlic, herbs, salt, pepper, and 2 Tbs of oil. Make sure the chops are evenly coated on both sides. Placed into the refrigerator to marinade for at least an hour. 2. Turn oven on to broil on HIGH. Now, to a hot cast-iron skillet or nonstick skillet add 1 Tbs oil.
