This red lentil soup is one of my all-time favorite dinners. Sautéed leeks and onions are combined with carrots, celery, crushed tomatoes, chicken broth, and red split lentils (which cook quickly!) to produce a hearty, thick lentil soup that is naturally gluten-free, nutritious, and filling. This soup tastes even better as leftovers and can be frozen and prepped ahead.

Xavier Bramble on Instagram: "Ramadan recipes part 4: Dali Bora 🇧🇩 Delightful fried lentil fritters which are bursting with spice and flavour 👌🏾😁 Recipe below :) Ingredients: 300g red split lentils 1 cup cilantro chopped 1/2 white onion chopped 1/3 cup cornflour 1 tbsp red chilli powder 1 tbsp tumeric 2 tbsp curry powder 1 tbsp salt 1/2 tbsp garam masala 500ml frying oil Step (1) Wash the red split lentils until the water runs clear. This should take about 5 mins. Then blend the lentils with a dash of water until smooth-ish. Step (2) Into a large bowl, mix together the chopped onions, cilantro, cornflour, chilli powder, tumeric, curry powder, garam masala and salt. Add a dash of water to loosen the batter. Then place in the fridge for 30 minutes.
