Zaalouk - Morrocan Eggplant & Tomato Dip - I found the eggplant a little hard to manage bc I'd never used it before. I used canned tomatoes and one can per 2lbs of eggplant was perfect. Overall delicious and would make again! Also skipped the fresh herbs here but I didn't notice them missing.
