Be my valentine...

While I’ve made these into hearts because Valentine’s day is right around the corner, any shape will do for this recipe. There are many silicone mould options at the dollar store, and you can reuse them for many other things after this recipe.

This cake recipe is my go-to Red Velvet sponge roll, but instead of rolling it up, I've used a pastry ring to cut the sponge sheet into 3" stackable rounds. The rounds are filled with a light whipped cream and cream cheese mixture, then topped off with a little more of the same.

This raspberry mousse is delicate, scrumptious, and airy. The base for the mousse is a gorgeous brownie full of mini chocolate chips. Pair them together and it's a match made in heaven!
