Receta Red Chicken Enchiladas

Ingredientes
- 6 x Flour Tortillas
- 1 med Onion, minced
- 2 c. Cooked chicken, minced
- 1Â 1/2 c. Grated sharp cheddar and Monterey Jack mixed
- 1 sm Can of green chiles
- 10 ounce Red enchilada sauce,MILD lowfat sour cream shredded lettuce minced tomatoes for garnish
Direcciones
- Preheat oven to 325 degree.
- Mix chicken, green chiles, onion, little of cheese and little of sauce into a bowl. Place about 1/3 c. of chicken mix down the middle of each tortilla. Roll and place seam side down in baking dish (about 9 by 9 inch). Repeat with remaining tortillas. Pour enchilada sauce over rolled tortillas and top with remaining cheese. Cover and bake 25 minutes, till enchiladas are warm and cheese is melted. Serve with lowfat sour cream, shredded lettuce and tomatoes for topping.
