This Romesco pasta salad with buratta is an Italian picnic staple. Romesco is kind of like a Spanish version of pesto – but instead of basil and Parmesan, the sauce gets the bulk of its flavor from roasted red peppers. The sauce gives a great smokey sweetness to everything, while the burrata makes everything so deliciously creamy – and you can’t go wrong with some cherry tomatoes and arugula too! July 4th might be over but it is still the holiday weekend and a summer full of potlucks and parties. I made a few small changes to the recipe--adding capers, using marinated mozzarella balls and stirring in about 1/2 cup of artichoke pesto I had on hand for extra oomph. Easy and delicious! Herby pesto pairs brilliantly with sweet tangy roasted tomatoes and salty bits of feta cheese. Throw it all together with some pasta and zucchini and you might even get your kids to eat their vegetables! To make things even easier, you can use storebought pesto, like my favorite from Bio Orto, in place of the homemade version. Photo Credit: Lizzy Newman
