Bake croissants in 300F oven for 8-10 minutes. Set aside to cool completely.  2. Make strawberry purée: Cook strawberries, sugar and lemon in a saucepan over medium heat until soft and purée has thickened, about 8-10 minutes. Remove from heat and let cool before pureeing until smooth. 3. In a large bowl, whip heavy cream, mascarpone cheese, icing sugar, vanilla and salt to firm peaks.
