In the video I salt and dry the steak overnight as this allows the surface to dry which helps with browning, and with slightly less water it also intensifies the beefy flavour. But you don’t have to! Salt and sear the steak right away, and while it rests, prep your veggies and sauces. It’s a super quick meal.

PRO TIP: If you’re having a steak dinner, cook off another steak or two and you’re prepped for a super fast meal later in the week!
