Today we’re making this SUPER EASY and ABSOLUTELY DELICIOUS herby courgette pie known as Kolokithopita in Greek 🥒

📌 RECIPE BELOW - service 9 portions

Gather

A square baking dish

3 courgettes/ 500g
4 sprigs of spring onions, chopped
A big handful of fresh dill, chopped
30g fresh mint, chopped
100g plain flour
2 large eggs
2 tsp dried oregano
Salt and pepper to taste
200g feta, crumbled
5-6 sheets of filo pastry
Olive oil for brushing

Method
1.) In a bowl lined with a tea towel, grate the courgettes. Then squeeze out the excess liquid and drain it from the bowl.
