Despite its translation—"fish fragrant eggplant,"—yu xiang qie zi actually contains no seafood or meat products whatsoever. Smoky eggplant is stir-fried until tender, then tossed with a quick sauce flavored with chiles, black vinegar, sugar, and ginger, and garlic.
