SANDWICHES

Objectives:
At the end of the session, the lifetime
learners must be able to:
• Prepare a variety of sandwiches;
- Identify sandwich components
- Identify bread suited for sandwich
making
- Suitable filling and spreads
- Select and prepare glazes/sweet sauces
• Present a variety of sandwiches; and
- Portion and control sandwiches and
their ingredients
- Present sandwiches attractively
• Storing sandwiches
- Store sandwiches properly
- Keep sandwiches in appropriate
conditions to maintain their quality and
taste.
WHAT IS A SANDWICH?
A Sandwich
a.Two or more slices of bread with a filling
such as meat or cheese placed between
them.
b.A partly split long or round containing a
filling
c.One slice of bread covered with a filling
THREE COMPONENTS OF SANDWICH
BREAD
Is always the focal point of a
sandwich because its importance is to
provide edible casing to the food inside.
Bread must be of good quality which can
give the best texture, appearance, and
taste to the product.
SPREADS
Is important to add flavor, to
add moisture or mouth-feel, and to
protect the bread from soaking from
the moisture content of the filling
1. Butter- Is the first spread to be applied
over the sides of the bread to prevent
the moisture of the filling be absorbed.
2. Mayonnaise- Is more preferred by the butter
because of its flavor.
3. Other spreads- Although butter and
mayonnaise are the most popular spreads,
there are spreads which can be used to add
flavor interest to sandwiches.
FILLING
The filling is the heart of any
sandwich which boost out its
flavor to give satisfaction to the
one who eats.
* Cheese
* Fish
* Vegetable Items
Types of SANDWICHES
COLD SANDWICHES

1. Simple cold sandwiches- This is made of


two slices of bread. It is simple not
because of its simple construction but
because of just having two slices of
bread.
3. Open – faced sandwiches- are made
with a single slice of bread, like large
canapés, the filling or topping should
be attractively arranged and garnished.
4. Tea sandwiches- are small, fancy
sandwiches generally made from light,
delicate ingredients, and bread that has
been trimmed of crust.
5. Wraps- are sandwiches in which
the fillings are wrapped.
HOT SANDWICHES
1.Simple hot sandwiches
2.Open faced hot sandwiches
3.Grilled sandwiches
4.Deep – fried sandwiches
5.Wraps like hot burritos, quesadillas
and filled enchiladas could be
considered hot sandwiches.
