INTRODUCTION
Bihari cuisine is eaten mainly in the eastern Indian state of Bihar, as well as in the places where people originating from the state of Bihar have
settled: Jharkhand, Eastern Uttar Pradesh, Bangladesh, Nepal, Mauritius, South Africa, Fiji, some cities of Pakistan, Guyana, Trinidad and
Tobago, Suriname, Jamaica, and the Caribbean. Bihari cuisine includes Bhojpuri cuisine,Maithil cuisine and Magahi cuisine.
The cuisine of Bihar is largely similar to North indian cuisine and East Indian cuisines . It is highly seasonal; watery foods such as watermelon
and sharbat made from the pulp of the wood-apple fruit are consumed mainly in the summer months, while dry foods such as preparations
made of sesame seeds and poppy seeds are consumed more frequently in the winter months.
South Bihari cuisine include litti chokha,a baked salted wheat-flour cake filled with sattu (baked chickpea flour) and some special spices,
which is served with baigan bharta, made of roasted eggplant (brinjal) and tomatoes.Dairy products are consumed frequently throughout the
year, including dahi (yogurt), spiced buttermilk (known as mattha), ghee, lassi and butter.
OBJECTIVE
The objectives of this present study are:
To compare restaurants in Delhi regarding Bihari Cuisine outlet popularity as compared to other cuisine.
To evaluate how the cuisine varies across the states and country.
To collect the information and statistics of the various hotels and restaurants in Delhi regarding the Awadhi
Cuisine outlet.
To analyse the statistics of various hotels and Restaurants where the research is being conducted.
RESEARCH METHODOLOGY
This topic is a survey based project numerous surveys need to be done to achieve the desired result.
The aim of the project is to find out the popularity/acceptability of Bihari cuisine in delhi ncr resraurants. By keeping in mind the various age
groups and their preferences and the popularity of Bihari cuisine among them and to look out for the best possible results of the survey so that
popularity/acceptability of Bihari cuisine can be proven.
The Research Methods may be defined as those methods / techniques that are used for conducting the research.
Procedure of data collection:-
Primary data as well as secondary data is used for the present study.
•Primary data is collected through the questionnaire, observation, interviews and feedbacks of various chefs, managers, youths and general
public of various age groups.
•Secondary data is collected through previous records, data and feedback forms, library resources: newspapers, magazines and internet.
There can be various methods of conducting research that can be stated below:-
1.Survey among the various 5 star hotel‟s Bihari Cusine outlets in the market. Visiting Restaurent like:-
•The potebelly divine , gurgaon
•Back in gaon ,lajapt nagar
• 70% says yes , there is mode of improvement in the Bihari cuisine live/display
kitchen
• 30% says no , there is no mode of improvement in the Bihari cuisine live/display
kitchen
Bihari cuisine is best suited for?
• 83% of people think that bihari cuisine is healthier than other cuisine.
• 17% of people think that bihari cuisine may be healthier than other.
• 0% of people think it is not healthier than other cuisine.
Is bihar food spicier compared to uttrakhand food?
• 36% of them agree that bihar food is spicier than north food.
• 64% of them don’t agree that bihar food is spicier than uttrakhand food.

CONCLUSION
Bihari cuisine has gained popularity all around the globe in the past few years.it has made its mark and established itself as
one of the leading cuisine. Bihari cuisine is proving to be a hit among culinary enthusiasts in India, especially the young
and the health conscious . Delhi being one of the metropolitan city of the country has a great section of people living here
with a lot of different cultural heritage and traditions. Thus, Bihari cuisine paving its way into the specialty restaurants of
five star hotels in delhi is something that we should be very surprised about.
According to the data collection from the survey, it is seen that a section of people has already tried the cuisine and those
who have not tried it they are very enthusiastic to explore the Bihari culinary culture. Many people agree that Bihari cuisine
may not be as popular as Bengali cuisine due to its ingredients, but it can easily derived from the assessment that the people
of delhi willing to explore new cuisine. The popularity of any cuisine is highly dependent on how much people are aware of
its existence. There are many number of people who know about of Bihari cuisine but there are more number of people
who are not aware about this cuisine, but due to lack of awareness a guest going to an oriental restaurant order for a
Bengali dish by default. Thus, awareness is playing a very major part in the popularity of Bihari cuisine in the restaurants of
delhi
So, it can be concluded that Bihari cuisine (food) has already been a part of the culinary culture of specialty restaurants of
delhi it is present in the market but not that popular. However, with little enlightenment people can accept the live/display
kitchen of Bihari cuisine & discover the unique charm and delights of the Bihari culinary culture.
