INTRODUCTION
• The kitchen is a workplace inside the home and at the same time
an important living room and meeting point for the occupants
and their guests, with various relationships to other areas of the
house.
• According to the building regulations, every house or flat must
have at least one kitchen or kitchenette for cooking.
• Kitchens and kitchenettes without windows are generally
undesirable and only permissible if effective ventilation is
guaranteed.
• As a habitable room, the kitchen must have a clear ceiling height
of at least 2.40 m and a window area (structural dimensions) of at EFFECTIVE KITCHEN WORKPLACE ARRANGEMENT
least 1/s of the net floor area.

LOCATION
• The location of the kitchen is ideally on the northeast or
northwest, in the immediate vicinity of the entrance area (short
distances for shopping, rubbish etc.), to the (vegetable) garden
and the cellar.
• There should be sensible internal room relationships with the
• dining room, utility room and larder.
• It should ideally be possible to see the front door, children's play
area and terrace from the kitchen.

FUNCTION AND ORGANISATION

• The capacity of the kitchen is primarily dependent on the number of


customer seats, customer expectations (type, extent and quality of
the meals offered), the proportion of products freshly prepared from
raw (in contrast to ready-prepared food) and the rate of customer
turnover all day or at mealtimes (consumer frequency).
• In fast food restaurants the rule of thumb for seat changes is about 1-
3 times per hour, in conventional restaurants about 2.
• In specialty and evening-based restaurants, the guests stay on
average for 1.3-2 hours.

PERCENTAGE OF TOTAL KITCHEN SPACE REQUIREMENT

• Aisle widths in storage, preparation and production areas differ


according to whether they are purely traffic routes or also overlap the
service area.
• Working aisle widths should be 0.90-1.20 m, side traffic routes with
(temporary) overlapping use 1.50-1.80 m and main traffic routes
(transport and two-way through traffic) 2.10-3.30 m wide.
• For kitchen areas in small to medium restaurants, aisle widths of
1.00-1.50 m should be sufficient.

INTRODUCTION
• A bathroom is defined as an independent room with bath/shower and
toilet and, according to building regulations, belongs to the
minimum equipment of a flat or house. In larger houses, bath and we
should be in separate rooms, or an additional we (guest WC) should
be provided.
• The bathroom should be oriented to the north, and if possible have
natural ventilation and lighting.
• The bathroom is normally next to the bedroom although it is also
often convenient for technical reasons to place bath and kitchen (or
we and kitchen) on a common installation shaft.

SPACE REQUIREMENTS FOR BATHROOM AND WC UNITS
DETAILS AND FITTING OUT

The former standard valid for movement areas in bathrooms was


withdrawn without replacement in 2007, because it inadequately
considered the requirements of disabled people. The dimensions given
here should therefore be considered as absolute minimums. The
movement areas in bathrooms should generally be based on the
'Accessible building' standard.

The basic bathroom categories are: (guest) WCs with we and washbasin
-3-4 , shower rooms with shower and basin -5-6, bathrooms with bath,
washbasin and WC -7-8. full bathrooms with bath, shower, washbasin
and WC-10

• Every kitchen must have provision for washing utensils, with proper connection to drainage.
• The kitchen must be provided with an impermeable floor.
• The kitchen must open into an interior or exterior open space and should not be less than one sq metre.
• The kitchen should not open into a shaft.
• No chutes to be used in buildings above 15 meters.

NBC GUIDELINES RELATED TO BATHROOMS


• One of the walls should have an opening to the open air. Minimum ventilation or window space should be provided
measuring up to 0.37 sq meters.
• A bathroom must always be over another bathroom or washing place or the terrace space and not over another room.
Watertight floors can be an exception to this rule.
• The seat should be made of non-absorbent material.
• Bathrooms should be enclosed by partitions/walls, provided with an impervious surface with a height prescribed as not
less than one meter.
• The floor covering should be impervious too but sloping towards the drain and not towards any other room or balcony
space.
• A room provided with a water closet is to be used as a toilet only. These rooms must be provided with flush cisterns.
• If there is a toilet on the terrace with a height of 2.2 meters, it should be counted in the Floor Area Ratio (FAR).
• In the absence of a sewage outlet, a septic tank must be provided.

Nursery Schools : 1 per 15 pupils(students) or part thereof
Educational institutions (Non-Residential) : For Boys : 1 per 40 pupils(students) or part thereof
Educational institutions (Non-Residential) : For Girls : 1 per 25 pupils(students) or part thereof
Educational institutions (Residential) : For Boys : 1 per 8 pupils (students) or part thereof
Educational institutions (Residential) : For Girls : 1 per 6 pupils (students) or part thereof

3. FOR RESTAURANTS
Water closet (WC) Requirements
For Male public : 1 for 50 seats up to 200 seats; and for over 200 seats, add at the rate of 1 per 100 seats or part thereof
For Female public : 1 for 50 seats up to 200 seats; and for over 200 seats, add at the rate of 1 per 100 seats or part thereof

For residential Public Staff : 1 per 8 persons omitting occupants of the room with attached water closets ; minimum of 2 if both
sexes are lodged
For public rooms (male) : 1 per 100 persons up to 400 persons and for over 400, add at the rate of 1 per 250 persons or part
thereof

7.FOR FACTORIES
Water closet (WC) Requirements :
For Male personnel : 1 for 1 to 15 persons
2 for 16 to 35 persons
3 for 36 to 65 persons
4 for 66 to 100 persons…..
For Female personnel : 1 for 1 to 12 persons

8.FOR HOSPITALS
Water closet (WC) Requirement
Indoor Patient Wards ( For Males and Females) : 1 for every 8 beds or part thereof

Wash basins Requirement : 16

Indoor Patient Wards ( For Males and Females) : 2 up to 30 beds; add 1 for every additional 30 beds or part thereof
9. FOR CINEMAS, CONCERT HALLS AND THEATERS

Water closets (WC) requirements :


Male public : 1 per 100 persons up to 400 persons; and for over 400 persons, add at the rate of 1 per 250 persons or part thereof
Female public : 3 per 100 persons up to 200 persons; and for over 200 persons add at the rate of 2 per 100 persons or part
thereof
Male staff : 1 for 1 to 15 persons 2 for 16 to 35 persons
Female staff : 1 for 1 to 12 persons 2 for 13 to 25 persons
