Black Bean Salad with Jicama, Tomatoes, Cilantro, and Lime Recipe |

Crispy Black Bean + Feta Tacos- Super yummy, and good to bring to a
potluck.
Easy black bean chili
One onion
One zucchini
One red pepper
One green pepper
One carrot
As much garlic as you want.
Half a cup of quinoa
Three cans of black beans
Three cans of diced tomatoes
One can of tomato sauce
Two tablespoons of chili powder
One tablespoon of cumin
Salt
1. Chop and cook the onion in a little bit of oil until they’re translucent.
2. Chop all the vegetables and add them to the onions. Add salt. Cook for ten
minutes.
3. While the vegetables are cooking, cook the quinoa (one cup of water).
4. After the vegetables are done, add all the beans, tomatoes, and sauce to the pot.
5. Add the chili powder, cumin, and some more salt, if that’s what you’re into.
6. Simmer for 35-45 minutes.
Kale, white beans, and pesto
When I am feeling super lazy, I wash some kale, wilt it in a pan for a bit, add a can of
white beans, and cook until it's all warm. Then I throw it in a bowl and add as much
pesto as I am craving.
