KELLOGG Co : A CASE STUDY IN BREAKFAST CEREAL COMPANIES

In 1894, Dr Will Keith Kellogg together with his brother , Dr John Harvey Kellogg, invented cornflakes
in Battle Creek, a small quiet town on the banks of Battle Creek river, 113 miles west of Detroit in the
USA. Dr Kellogg and his brother ran their own health center there. They offered their wealthy patients
a combination of physical activity and fresh air. They also wanted to offer them a nutritious and tasty
diet.

Cornflakes were invented by accident! Apparently the hot corn cereal was left too long in the pan
one day in the kitchen of the health center producing crisp flakes, something new for everyone’s
breakfast table around the world.

Cornflakes were so popular that a Kellogg Company was established in 1922 and Battle Creek
became the world capital of breakfast cereals. For many decades the Kellogg Company enjoyed fame
and fortune, but in the last decades, the company has lost considerable ground. Their sales has
dropped dramatically. Probably one of the reasons for this is the change in eating habits of the
Americans. Fewer people are having cereal for breakfast now than they were in 1990.

What is the technology behind the way cornflakes are made in a factory ?

1- Harvesting : The maize is gathered by giant combine harvester.


2- Factory: The grain arrives by ship and it is transferred by suction pipes to large storage silos.
3- Milling: The maize is milled into grits.
4- Flavoring: Malt sugar and salt are blended according to the secret recipe. The mixture is
funneled into giant cookers where it is sealed and rotated under steam pressure.
5- Drying: The maize is dried in hot air currents and then is stored in tanks.
6- Every stage in this process is carefully checked and controlled to guarantee a high quality
breakfast cereal.
7- Flaking: The maize is pressed into flakes by heavy flaking mill rollers.
8- Toasting. The flakes are toasted in giant rotary ovens at high temperature.
9- Filling: The toasted flakes flow from the oven to the filling machines. They are automatically
weighed into bags.
10- Packing and distribution : Filled bags pass along conveyor belts and packed into boxes. Boxes
of cornflakes are sent to distributors and shops by road night and day.
