Gluten-free baking
Coeliac disease is a gluten intolerance. It manifests itself in the form of a chronic disease of the
lining of the small intestine due to a hypersensitivity to gluten components, the gluten protein that is
found in many types of grains. The intolerance is hereditary to some extent, remains for life, and
cannot be cured. The only treatment option for coeliac disease is a lifelong gluten-free diet.
Gluten-free breads or cakes from the health food store or from your own kitchen, which were made
with gluten-free ingredients, may be consumed.
Baking bread or cake with gluten-free flours takes some practice because these flours behave
differently to regular wheat or rye flour. They need more time to absorb liquids and have other rise
properties. To ensure that the final product is gluten-free, all other ingredients used, for example,
raising agents or binding agents, must be gluten-free. The taste and the texture of gluten-free breads
differ significantly from wheat or rye flour breads.
Measuring ingredients
Measuring containers for dry and liquid ingredients are included with the automatic bread maker
and are intended to facilitate the precise measuring of the ingredients used:
1 measuring cup with measuring scale for liquids
1 large measuring spoon, the content of which is equivalent to one tablespoon (tbsp.)
1 small measuring spoon, the content of which is equivalent to one teaspoon (tsp.)
When measuring the ingredients, ensure that you adhere as precisely as possible to the specified
quantities in the recipes. This is the only way in which to achieve the desired result.
Baking mixes
The SilverCrest automatic bread maker is of course ideally suited also for the use of baking mixes.
To obtain perfect baking results, adhere as closely as possible to the manufacturer's instructions on
the packaging. Most bread mixes are available in 1000g packages.
You can buy inexpensive bread mixes in many tasty variations and ingredients for your
own recipes in your local LIDL store. Follow the baking instructions on the packaging.
