TITLE Alaminos Longganisa Culinary Arts Competition

THEME Hundred Ways of Cooking Alaminos Longanisa

OBJECTIVES - Discover the culinary talents and skills of Alaminians

- Showcase the creativity and innovative spirit of Alaminians in using


local ingredients to create gastronomic delights that can be served
to the international market
RATIONALE The City of Alaminos, aside from being the home of the world-famous
Hundred Islands, is also known for its very own local sausage, named
Alaminos Longganisa.

Made of ground pork, garlic and seasoning stuffed into the thin
membrane of pig intestines, this version of Filipino sausage stands out
from the rest, not only because of its savory flavor, but also for the
“toothpicks” stuck at both ends to seal the meat snugly inside its
casing.

In its plain form, the Alaminos Longganisa is usually served as a


breakfast dish, with fried eggs, fried dried fish, and tomatoes, etc. Over
the years, it has been used in various recipes and has titillated the taste
buds of foodies, both here and abroad.

On the occasion of the 2023 Hundred Islands Festival, particularly in


the Agri-Trade Fair, the Alaminos Longganisa will be highlighted in a
culinary competition, testing the skills and talents of homegrown chefs.
The goal of the competition is to stimulate the creativity of students
taking up culinary-related courses from schools in the city. From the
result of the competition, JCI Hundred Islands shall be producing a
publication featuring a hundred recipes using the Alaminos Longganisa.
This is part of JCIHI’s way of promoting local culture and supporting the
city’s tourism industry.

COMPETITION RULES AND GUIDELINES

1. This competition is open to all high school and college students taking up culinary-related
courses, like cookery, hotel and restaurant management, etc. There shall be a maximum
of two (2) teams / entries per school composed of three (3) members per team.

2. Participants must be duly enrolled in the school/college/university he/she represents.


They must submit a certification of enrolment duty signed by the School Principal / College
Registrar.

3. Only ten (10) groups will be accepted for this competition. Entry will be on a first come,
first served basis. Submit the Entry Form and other documents on or before Monday,
March 20, 2023 @ JCI Hundred Islands Office, P. Reinoso Street, Poblacion, Alaminos
City, Pangasinan. Look for Yassi Carambas or Gina Cortez.

4. The team is required to:


a. bring their own cooking equipment, utensils, appliances, and accessories;
b. bring their own crockery and cutlery (good for 4);
c. bring all ingredients needed for their respective recipes; and
d. wear proper chef’s uniform during the competition (non-skid shoes, hairnet, white
coat and apron). No school logo / name should appear in the contestants’ attire.

5. The organizer/sponsor will provide the following:


a. six (6) dozens of Alaminos longganisa;
b. stoves and gas tanks;
c. working tables;
d. separate station for electric kitchen appliances;
e. display table where food will be evaluated; and
f. contestant number/badge.

6. The team will prepare


a. one (1) appetizer/pulutan,
b. one (1) sandwich
c. one (1) pasta dish
d. two (2) main dishes
e. highlight dish: Alaminos way of cooking and serving longganisa (if you are to serve
longganisa for a guest, how will you cook it?)
f. nameplates for dishes (4 inches by 2 inches)

7. The team will be given a maximum of 25 minutes to execute their entry per dish
(preparation, cooking and presentation). Teams may bring pre-cut ingredients. No
overtime will be allowed.

8. Serving must be good for four (4) persons: one (1) for the display table and the rest are
for the three (3) judges.

9. Only the judges, duly registered participants and the organizing committee are allowed
inside the competition area.

10. Participants who violate any of the rules and guidelines of the competition will
automatically be disqualified.

11. The Judges’ decision is final.

12. All recipes, once submitted as an entry and prepared/served in the competition, shall be
the property of the organizers. The respective chef shall be acknowledged as the creator
of the dish in the coffee table book and other publicity materials.

13. Prizes at stake are the following:

Champion – ₱5,000

1st Placer – ₱3,500

2nd Placer – ₱2,500

Winner per dish – ₱1,000

Consolation Prize – ₱1,500

CRITERIA FOR JUDGING

1. MISE EN PLACE 10%


Orderly preparation of materials, neat
working area and style, accurate
techniques, adherence to work schedule
and punctual completion of work.

2. PROFESSIONAL PREPARATION 20%


Practical culinary procedures and easily
digestible preparation, free of unnecessary
details and extras. Any side dishes and
extras should complement the main dish in
quantity, flavor and color and should be in
keeping with modern nutritional teaching.
The assigned person must strictly observe
the minimum number of side dishes.

3. PROFESSIONAL SERVING METHODS AND

PRESENTATION
Main meals and side dishes should be in
proportion to one another. The dishes
should be reciprocally complementary in
both content and color. The arrangement
of the plates should be practical, neat, and
pleasant. Conducive to everyday serving
and not cluttered. Bases and non-edible
items should be avoided. Premium points
will be given to innovative preparation and
serving methods.

4. TASTE & NUTRITIVE VALUE 40%


The natural flavor of the dish shall be the
predominant factor in gauging palatability.
Sufficient seasoning should bring out
typical flavor and character of Alaminos
longganisa.
