POSITION BARTENDER EFFECTIVE DATE

RELATIONSHIP:
1. Reports directly to Beverage Supervisor for assignments and instruction on all
operational matters, policies and procedures.
2. Promotes goodwill relationship with members and guests.

SUMMARY OF DUTIES:
Under the general guidance and supervision of the F&B Manager and within the
limits of established Policies and Procedures and Bar Manual, provides courteous
and efficient service of food and beverage to guests.

Bartender/Barista is responsible for the smooth and efficient operation of his bar.
He is held responsible for the quality of the drinks he/she prepares in accordance
with standard recipe.

Bartender mainly responsible for the control of the beverage stock and correct
profitable sale of food and beverage in the outlet.

A. STATEMENT OF DUTIES:

1. Prepares and mixes drinks according to established drink recipe standards.

2. To mix drink ingredients from memory with speed and avoid wastage.

3. To set up the bar for the day’s operation, ensure bar preparation is based
on week day and week end operation

4. Performs pre-opening preparations, check that all fruits, juices, creams,


garnishes, ice, clean bar equipment, and other bar supplies needed for the
full day operation are ready

5. To clean bar counters, sink, equipment, floors, cabinets and arrange bar
displays to make it presentable and attractive

6. To obtain the requisitioned items from the storeroom, check the actual
issuance against the bar requisition and check the par stock in the bar,
ascertaining that both are correct. If any discrepancies are found, he
reports them to the Bar Supervisor immediately.

7. Bartender is fully responsible for the service and comfort of the customer at
the bar counter.

8. To take the order of the customer at the counter.

9. To prepare and serve the drink to the customer.

10. To obtain check from the cashier and indicate the order thereon.

11. To present validated check, receive and remit payments to the cashier
and give change to the customer.

12. To replace immediately without charge any unsatisfactory beverage


items.

13. To record beverage items that are rejected or spilled or cannot be used
again in the spoilage report for record purposes and for the information of
cost control.

14. To report all equipment failures or malfunction to the Bar Supervisor as soon
as possible.

15. Conducts daily bar inventory and refills stocks

16. At the end of the shift, the closing Bartender performs the following:

• Determining stock below par and prepares the requisition of the


following:
a) Spirits
b) Wines
c) Beers
d) Mixers
e) Juices
f) Fresh Fruits
g) And other supplies needed for the next day’s operation.

• Preparing all system and control procedure and forwarding to cost


control.
a) Daily Inventory of Stock
b) Spoilage Report
c) Full Bottle Sales Report

* To ensure that all bar stocks are kept properly arranged in their
prescribed area, refrigerators, cabinets and doors securely locked.

* To set-up the bar for the following shift and turn over the bar neat
and orderly at all times with sufficient stock of liquors, fruits, juices
and garnishes.

17. Prepares daily beverage consumption report

18. Maintains and safekeeping of bar equipment

19. Recommends innovations for the bar and beverage concoctions

20. Reports and follow-up all defects until acted upon

21. Familiarizes himself with the menu and other offerings

22. Performs clearing and closing procedures

23. Performs other related tasks that may be assigned from time to time

24. Assists and trains the Bartender in all related aspects
