Related Learning Outcomes
By the end of this session, students are expected
to be able to:
• Recognize importance of food additive applications in
food products and food manufacturing
• Review the range of additives, which are used to
improve organoleptic properties of food.
• Overview the food additives which are used to improve
or maintain nutritional value of food, and to maintain
quality and extend shelf life of foods.

• Can be handwritten/ typed, anything that you're comfortable with and

General Laboratory Procedure
Divided to several sessions:
1. Briefing
2. Sample preparation
3. Analysis &
observation
1. Review:
- Food product name, brand, ingredient list OR Food additive
name, brand, to develop what food product
- Define: category, class, and function of specific additives in the
product
2. List and rank of class of additives used (e.g. monosodium
glutamate is the most used in various foods)
3. Harmful effects & hazard of (if any), from scientific articles OR
government authority regulations (e.g. EFSA, FDA, BPOM)
