PATISSERIE METHOD: ECLAIR CAKE RECIPE

Ingredients for Eclair Cake Recipe
 100g butter
 1 dessert sp granulated sugar
 1/4tps salt
 1 glass water That
 1 package vanillin
 4  egg
 1 glass Fame(+2 tablespoons of flour)

For the cream filling:

 3 water glass milk


 1 egg yolk
 3 tablespoon Fame
 2 tablespoon wheat starch
 6 tablespoon granulated sugar
 1tablespoon butter
 1 package vanillin
 1 package whipped cream

For the chocolate sauce:

 200gramchocolate (dark or milk)

The number of pieces will vary according to the size of the eclair dough you shape. Be sure to add the egg yolks
one by one and after the dough has cooled to give the final form of the dough that takes on consistency.

Eclair Cake Recipe How to Make?


1. First, make the cream and let it cool. You can also make the cream the night before. It will be delicious
that way. Put all the ingredients except butter, whipped cream and vanilla in a deep saucepan.

 
2. Stirring constantly, add the butter and vanilla when the consistency starts to boil. Mix it well and take it
off the stove. Stir occasionally and let it cool. Add whipped cream to the cooled cream and mix with a
mixer.

3. Wrap it up and put it in the fridge.

4. For the eclair dough, put the water and butter in the pot. Add a pinch of salt and sugar as well. When the
butter melts and the water starts to boil, lower the bottom of the pan and add the flour. Stir constantly to
get a smooth consistency. When the dough does not stick to the pan, turn off the heat and let it cool.

5. Add the eggs one by one to the cooled dough and mix with the mixer. Put the dough in a piping bag.

6. Squeeze the dough to the size you want with certain backings on the baking tray lined with greaseproof
paper.

7. Bake in a preheated 180 degree fanless oven for 40-45 minutes.

8. Do not take the cooked eclairs from the oven immediately, let them sit in the oven for half an hour.

9. Melt the chocolate in a bain-marie.

10. After cooling, cut the eclairs in half with the help of a knife,

11. Squeeze the cream inside and cover it.

12. Dip the top of the eclairs in the melted chocolate and decorate with pistachios. Our eclairs are ready, bon
