MENU 1 & MENU 2
MENU 1 EXPLANATION:

STUFFED EGG RUSSIAN SALAD

It’s cold appetizer made from Russian salad and stuffed egg. Underline with lettuce and served with
mayonnaise. Garnished with slice of hard egg and parsley. Russian salad made from cube of vegetable
(carrot, green bean, potatoes and green peas). Mayonnaise made from egg yolk, salad oil, lime juice,
French mustard, white vinegar, Worchester sauce, salt and pepper.

PAYSANNE SOUP

It’s hot clear soup made from beef stock, paysanne carrot, turnip, leek, bacon and cabbage. Garnish with
chopped parsley and grated cheese

BLACK PEPPER STEAK

It’s made from grilled fillet of tenderloin (marinade with pepper and mustard) and served with black
pepper sauce, jardinière vegetable and french fries. Black pepper sauce is made from butter, chopped
shallot, demiglace, white wine, fresh cream, oil and black pepper

FRENCH FRIES POTATOES

It’s deep frying of jardinière potatoes until it golden brown.

JARDINIERE OF VEGETABLES

It’s made from sauté of blanch jardinière carrot, turnip, and green bean

DEVIL PANCAKES

It’s a hot dessert made from crepes stuffed with pastry cream (mixed with sukade) peach and raisin.
Served with devil sauce and garnished with sukade, rose almond, and red cherry. Crepes made from
milk, hard flour, sugar, salt, egg, melted butter. Pastry cream made from milk, sugar, custard powder,
maizena, egg yolk. Devil sauce is made from water, sugar, ginger powder, yellow & red color,
maizena, salt.

AMERICAN SOFT ROLL

It’s made from milk, sugar, egg, butter, water, instant yeast, hard flour, salt.
MENU 2 EXPLANATION:

AVOCADO VINAGRETTE

It’s cold appetizer made from slice of fresh avocado, cube of avocado, and shredded lettuce.
Underline with lettuce and served with vinaigrette dressing made from salad oil, white vinegar, onion
and gherkins. Garnished with slice of tomato, chopped parsley and black olive.

CREAM OF TOMATO SOUP

It’s hot thick soup made from chicken stock, cream tomato paste, onion, chopped tomato, and bacon.
Garnish with crouton

CHICKEN SAUTE CHASSEUR

It’s made from chicken meat (marinade with pepper and mustard), savoyard potatoes, carrot calamart
and green peas. Served with chasseur sauce. Chasseur sauce is made from butter, chopped shallot,
tomato concasse, mushroom, demiglace, salt and pepper, tarragon, chopped parsley, oil, oregano,
thyme and bay leaf

SAVOYARDE POTATOES

It’s made from sauté baked of potatoes and served with greeted cheese

CARROT CALAMART

It’s made from sauté of boiled cube carrot and green bean

APPLE PIE A’LA MODE

It’s a hot dessert made from pie dough filled with slice of sauté apple and raisin. Garnished with
springkel icing sugar and ice cream. Pie dough made from soft flour, soft butter, egg, salt, ice cream.
Saute apple made from butter, sugar, apple, raisin, vanilla essence, wine, lemon, essence, maizena,
custard powder.

It’s made from milk, sugar, egg, butter, water, instant yeast, hard flour, salt.

SEAFOOD FRITTERS TOMATO SAUCE

it’s hot apperttizer made from deep frying fillet of fish, squid, prawn and serve with tomato sauce

PUREE OF POTATOES SOUP

it’s hot thick soup made from chicken stock , potatoes, leak, onion, margarine, fresh cream, and
garnish with crouton

POACH DARNE MACKAREL DUGLERE

it’s poach of mackarel fish serve with duglere sauce

CROQUTTE POTATOES

it’s made from deep frying of roll mashed pottaoes, egg and flour

ASPARAGUS TIP AU GRATIN

it’s made from fresh asparagus and melted with butter, shredded of grated cheese and morney sauce.
morney sauce made from roux of butter, flour and milk

CREAM CARAMEL

it’s cold dessert made from glucose, sugar, milk, egg decorate with whipped cream and garnish with
red cherry

BRIOCHE

it’s made from hard flour, milk, sugar, egg, butter, water, instant yeast and salt
MENU 4 EXPLANATION

CHICKEN SALAD HAWAIAN

It’s cold appertizer made from boiled of chicken, cube of apple, pineapple and celery stick serve with
mayonnaise sauce, underline with lettuce, garnish with parsley and slice of boiled egg. mayonnaise
sauce is made from egg yolk, salad oil, worchestershire sauce, mustard, vinegar, salt & pepper

MINISTRONE

It’s hot clear soup made from chicken stock, tomato paste, fresh tomatoes, paysanne onion, leek,
carrot, potato, cabbage, bacon and garnish with chopped parsley

BREADED CHICKEN CUTLET MAITRE D’HOTEL

It’s made from deep frying chicken meet coated with egg and serve with maitre d’hotel sauce maitre
d’hotel sauce is made from misture of butter, parsley, lime, salt & pepper

WILLIAM POTATOES

It’s made from deep frying of mashed potato mix with nutmeg, sour cream, butter, egg yolk and
clove on top

GLACED CARROT

It’s made from saute of carrot inrich with chicken stock, salt & pepper to taste

FRESH FRUIT CAKE

It’s cold dessert made from sugar dough, sponge cake, syrup, pastry cream and fresh fruit on top
( papaya, kiwi, grape) decorate with biscuit crumb

It’s made from hard flour, milk, sugar, egg, butter, water, instant yeast and salt
MENU 5 & MENU 6
MENU 5 EXPLANATION:

STUFFED CHICKEN WINGS PROVENCALE SAUCE

It’s hot appetizer made from deep frying stuffed chicken wing served with provencale sauce.
Provencale sauce made from chicken stock, white wine vinegar, chopped garlic, thyme, butter.

CONSOMME JULIENNE

It’s hot clear soup made from beef concomme served with julienne of carrot,leek, & celery.

ROASTED CHICKEN WITH GRAVY SAUCE

It’s roasted of chicken and served with gravy sauce. Gravy sauce made from brown stock, butter,
mirepoix , herb and spices.

BAKED POTATOES (CONDIMENT)

It’s made from baked potatoes with sour cream and chives on top, covered with aluminium foil.

VEGETABLES PRINTANIERE (CONDIMENT)

It’s combination boiled of young vegetables such as potatoes, turnip, shallot,carrot, green peas, butter

CHOCOLATE CAKE

It’s cold dessert made from chocolate sponge cake, pastry cream, whipped cream, chopped cashew
nut, dan garnish with a red cherry on top of chocolate cake.

CLOVER ROLL

It’s made from mixed of hard flour, milk, sugar, egg, butter, water, instant yeast, and salt.
MENU 6 EXPLANATION:

SPAGHETTI BOLOGNESE

It’s boiled spaghetti and served with bolognaise sauce. Bolognaise sauce made from tomato concase,
tomato paste, chopped meat, onion, carrot, thyme, chopped garlic, cream and white vinegar.

SPAGHETTI MARINARA

It’s boiled spaghetti and served with marinara sauce and springkle parmesan cheese on top. Marinara
sauce made from boiled of shrimp, seafood, red snapper, mustard, cream, white vinegar.

MIXED GREEN SALAD WITH RAVIGETO DRESSING (CONDIMENT).

It’s made from slice of green pepper, onion, cucumber, and underline with lettuce served with
ravigote dressing and garnish with parsley.

BLACK FOREST CAKE

It’s cold dessert made from chocolate sponge cake, dark cherry, chocolate block, sugar, cinnamon,
red wine, custard powder, whipped cream, and garnish with a red cherry on top of the black forest
cake.

CLOVER ROLL

It’s made from mixed of hard flour, milk, sugar, egg, butter, water, instant yeast, and salt.
