This device is capable of high temperature.


If used without due caution it can constitute a
safety hazard. The outer surface will become
hot enough to cause very serious burn
and the fryer has the potential to ignite
flammable materials on or near the fryer.
The fryer can create a high pressure inside

Instruction in operating the Vacuum Fryer
Follow the step by step instruction carefully!
Before starting cooking make sure to close all valve on the machine (see Fig.1)
Connect the gas tank to the gas valve for each burner. (see Fig.2)

Connect the hose for the Cooling tower and the Pump. Connect the water faucet to
the automatic fill. Then the inlet to the out of the vacuum pump and the outlet to in of the
vacuum pump. (see Fig.3 & 4) Check the gas hose for any leak and need for replacement.
Check the pipes and other parts of the machine for damages if do so please contact the
supplier for instruction.

After checking the machine and all are good you may now plug the machine to the
power supply and put the oil on the pre-heating tank and the product to be fry on the bas-
ket inside the fryer tank. To get the basket remove all the lock seal on the cover of the
tank. (see Fig.5) after removing the cover of the tank take the basket out of the tank. You
may now put the product inside the basket don't forget to lock the basket before putting
back inside the tank. When putting the basket inside the tank make sure to lock it in place
by pushing it in. Now close each tank make sure to put it in the right position and lock all
the cover of each tank. (see Fig.5)

“All valve from V1-V6 must be close at this point see Fig.7”

When the cover are lock in place you may now start the burner of the pre heating
tank. First open the gas valve and slightly turn the flame controller located near the tank
( see Fig.6) to open. Light the burner using the igniter switch for the pre heating tank
(under the “burner one” section on the control panel). The light indicator will light when
there are fire on the burner. Now set the temperature on the Temp. controller for the pre
heating tank.( see Omron E5CC manual). And wait for the oil to boil/ reach the desire
temp.

You may turn on the LED light inside the tank and monitor the
oil on the peeping hole”

When the oil is boiling and ready to be transfer switch in the fryer tank burner.
Open the gas valve and slightly turn the flame controller located near the tank (see Fig.6)
to open. Light the burner using the igniter switch for the fryer (under the “burner two”
section on the control panel). The light indicator will light when there are fire on the
burner. Now set the temperature on the Temp. controller for the fryer tank. (see Omron
E5CC manual). Open the valves V1 & V2. Then switch ON the “VACUUM/COOLING
TOWER” on the control panel to start the vacuum. Now open the valves V4 & V5 to start
transferring the oil from the pre heating tank to fryer tank. (see Fig.8) After all the oil are
transferred close the valve V4 & V5. Wait for the product to be cooked.

When the product is cooked turn OFF the burner on the fryer tank then transfer the oil
back to the preheating tank. To transfer the oil open the valve V3,V4 & V5 and close the
V2.(see Fig 9) after all the oil are backed in the preheating tank close the valve V3, V4 &
V5 and open V2, and turn ON the spinner for the cooked product to dry. (see Fig.10)

“when doing a consecutive frying after transferring back the oil in the
Preheating tank turn on the burner again to maintain the heat of the oil and
ready for the next frying.”

When the product is dried and ready to be out of the tank. Turn OFF the spinner and
the Vacuum/Cooling tower. OPEN THE PRESSURE VALVE ON THE FRYER TANK
TO RELEASE THE PRESSURE INSIDE THE TANK. Then unlock all lock seal on the
cover of the tank and take the basket out. When taking out the basket use a glove for safety.

“when doing a consecutive frying we recommend to have 2 set


of basket for after the first batch the 2nd basket is ready for 2nd batch and the
first basket can be clean and ready for the next batch.”

Notes:
 When connecting the machine to the gas source make sure that there are
no leak on the gas tank and gas hose. Use a sponge with soap and check the
tank and hose for any leak.
 You can set the High & Low Temp on the Temperature Controller, High
Temp is for the cooking temperature and the Low Temp is for the burner to
light again because when the Temp.C reached the High Temp the burner will
automatically stop/close so that temp will not go higher than the set temp.
Don't set the Low Temp at a very low rate, we recommend to set the Low
Temp about 5-6˚ lower than the High Temp to maintain heat of the oil.
(see omron manual)
 Don't forget to open the pressure valve for each tank before opening the
cover.
 Use gloves on using the machine for most of the part can be super hot that
can cause serious burn/injury.

Cleaning & Maintenance


 After using the machine wait for moment until the machine
parts cooled down. Then start draining the tanks by opening the
valves V4,V5,&V6. (see draining on page10 ) Pour some water in-
side the tank while draining to sure all oil are drained out from the
tank.
 For cleaning the surface of the machine us a slightly wet rag,
towel, or sponge. To remove the stains. Using other brush or other
hard material may scratch the paint. For the basket use a brush to
remove some product residue.
 Prevent the following parts from getting wet motor, control
panel, power plugs from getting wet.
 Check any damage parts before using the machine. If found
damage kindly do contact the supplier for further instruction.

OPERATING SUMMARY
Put the product in basket inside the frying tank and the cooking oil in the pre-
heating tank. Turn ON the burner on the preheat tank to preheat the oil. When the oil is
boiling and ready for frying. Start the vacuum / cooling tank, transfer the boiling oil to the
frying tank and turn the ON burner on the fryer tank and close the burner on preheating
tank. When done frying transfer back the oil to the preheating tank and start drying the
fried product by turning ON the spinner. After drying the product turn OFF the spinner and
before taking out the basket out of the tank open the pressure valve on the tank to release
the pressure inside now take the basket out of the tank. Clean the basket for the next batch.

SUMMARY NG OPERATING
Ilagay ang produkto sa basket sa loob ng frying tank at ang mantika sa preheating tank. I-ON ang
burner sa preheat tank upang mapakulo ang mantika. Kapag ang mantika ay kumukulo at handa na para sa
Pagprito. Simulan ang vacuum / cooling tank, ilipat ang mantika na kumukulo sa frying tank at i-ON ang
apoy sa fryer tank at patayin ang apoy sa preheating tank. Kapag tapos na ang pag-pipirto ay ibalik ang man-
tika sa preheating tank at simulan ang pagpapatuyo ng pritong produkto sa pamamagitan ng pag-bukas sa
spinner. Pagkatapos maalis ang produkto ay patayin ang spinner at bago kunin ang basket sa tangke buksan
ang pressure valve sa tangke upang ilabas ang presyon sa loob, ngayon maari ng kunin ang basket sa tangke.
Linisin ang basket para sa susunod na pagamit.
