Braised Duck
1. Prepare the marinade sauce by mixing one teaspoon of five-spice powder, half a teaspoon of
salt, two tablespoon of light soy sauce and one quarter cup of dark soy sauce together in a small
bowl.
2. Rub the marinade sauce evenly on the duck and set aside for two hours.
3. Put two tablespoon of sugar and two tablespoon of water in a wok and stir well. When it begins
to caramelise, add in four cloves of garlic (smashed with skin intact), one inch of cinnamon stick,
three thin slices of galangal, three cups of water and the duck prepared in Step 2 together with
the marinade sauce. Cover with lid and simmer for one hour till the meat becomes tender. Keep
turning from time to time during simmering.
4. Prepare the dipping sauce by mixing 1 tablespoon of Hoisin sauce, half a cup of gravy from the
stewed duck in Step 3 and half a teaspoon of corn flour in a small wok. Mix well and bring to a
boil.

Singapore, which has always been lauded as an international model of governance, has recently
become a cause for concern, even criticism. This is amid scrambles by governments in mainland
China, Hong Kong and elsewhere to pull out all the stops to contain the Covid-19 virus.
Fear-inducing headlines citing Singapore’s “zen approach” or “laissez-faire attitude” towards the
epidemic have flooded China’s social media in the past few days, with some saying that “Singapore
could become the next Wuhan”. Voices of concern ring out on WeChat and even in letters, offering
arguments as to why Singapore should not let its guard down before it is too late.
This outpouring of public opinion began when there were already dozens of confirmed cases in
Singapore. Quite a number of netizens thought that Singapore’s measures were “too mild”, given
that schools were not closed, residential communities was not tightly managed and residents were
asked to wear masks only when they were ill.
Admittedly, on Singapore’s roads and MRT trains, I did not detect any solemn anti-epidemic
atmosphere. But the impact of the outbreak is clear — restaurants and shopping malls are quiet,
and so are the trains. The government gave every household a pack of four masks, but also urged
citizens not to misuse them. Thus, only approximately 20% to 30% of people are seen wearing
masks on the streets.
Over the past few days, there have also been several commentaries rebutting the accusation that
“Singapore has given up”. Some praised Singapore’s transparency of information and said it was a
well-run technocracy; others lauded the alertness of the country’s health ministry, because as early
as 2 January, health officials in the city-state had already started temperature checks on all travellers
from Wuhan.

With mainland China, Hong Kong and other areas making concerted efforts to battle the Covid-19
virus, Singapore, which has always been the global superb “model student” in governance, has
recently been met with concern, even condemnation by many.
Over the past few days, fear-mongers have inundated the Chinese social media with headlines such
as “battling the epidemic like Buddhists”, Singapore “has become nonchalant” and “will surely be
another Wuhan”, leading to some concerned friends sending WeChat messages and even letters to
advise Singapore not to take things lightly, in case she regrets.
This round of public sentiments arose as a result of Singapore being already faced with ten over
confirmed cases. Several online users opined that with lessons continuing in schools, residential
estates still being freely accessible, and residents being told by the government not to put on masks
if they were not unwell, the measures being taken by Singapore were too calm for comfort.
Indeed, judging from the streets and MTR trains, one would not feel that the city-state has adopted
a tense battle posture against the virus. However the impact is unmistakable - you could hear a pin
drop in restaurants, shopping malls and even the trains. A pack of four masks has been distributed
by the government to each family, but only about 20% to 30% of those on the streets are wearing

again, same reply. I knew this was pointless.
While our Fitness Instructors and seniors in army camp always reminded us to go anywhere,
especially to the toilets at night with our buddy, this time, I just had to do it myself. Xiao Ming was a
good buddy but he was bad at waking up at nights.
Our bunk was on the fourth floor and just two doors away from the toilet. I could make a quick dash
without getting caught by the officers on night duty. So I opened the door and tiptoed towards the
toilet quickly.
The sensor-monitored lights flickered on as I entered and the fans roared to life. I settled myself into
the last cubicle and started my big business. I heard some movements outside. First, it was near the
shower stalls, then near the sinks, and it was getting nearer to my cubicle. Then nothing.
“Why you never tell me you are here alone?” I heard Xiao Ming’s voice.
I sighed. “You were sleeping like a log, by the time I wake you up, it will be tomorrow already.”

No reply. I finished up and went out to wash my hands. I saw Xiaoming waiting outside the toilet, his
back facing me.
