At first the tomato was considered poisonous and only used in gardening as a
decorative, were not contemplated as food, until one day a Neapolitan peasant for
his need to eat, accompanied his tomato bread and loved, to survive the word spread
and from then on the humble Neapolitan people began to eat the tomatoes with their
dry bread. This combination of bread and tomato becomes a very popular dish in the
region of Naples. Being a dish consumed mainly by humble people, most did not
have their own oven so they prepared the dough in their homes and took it to the
baker to bake it. Over time, due to its high demand, the Neapolitan pizzeros create
their own guild, separated from the classic bakers, preparing the dough themselves
and baking it, becoming a very popular dish among the people who took it home or
he ate it on the street, and street vendors of this rich market also appeared.
It is in the seventeenth century in Italy, specifically in Naples, when pizza appears
as a popular dish as we know it today.
The first pizzeria was opened in the year 1830 "Port 'Alba", which augured little future
and nevertheless remains open to this day. Raffaele Espósito, a well-known pizza
maker from Naples at that time, owner of the pizzeria "Pietro il Pizzaiolo", which we

know today under the name of "Pizzeria Brandi", in June 1889 he was in charge of
preparing some pizzas for the Italian kings, Don Umberto I and Doña Margarita de
Savoya, who were in Naples and wanted to taste that dish so famous that the humble
people of the city consumed, asking to be taken to the royal residence. Raffaele
Esposito baked and sent his majestades three different pizzas: the first,
"Mastunicola", made with lard, cheese and basil; the second, called "Marinara",
seasoned with garlic, oil and tomatoes; and the third, which he named "Monarca"
with which he wanted to honor the kings by drawing the colors of the Italian national
flag (green, white and red) with the ingredients basil, mozzarella cheese and
tomatoes. The latter being the favorite of the queen, so it was renamed by Raffaele
Esposito as "Pizza Margarita". From that moment everyone wanted to taste the
queen's favorite pizza, so it spread throughout Italy quickly becoming the
gastronomic symbol of the whole country and a unifying element since everyone

INGREDIENTS

PREPARATION
In a bowl we put all the ingredients of the dough: flour, water, yeast, oil and salt and
mix well with a spoon. A pizza dough is like a simple bread. It can be done with any
type of flour and the amount of water will be approximately half that of flour. If we
use a flour with more amount of gluten (strength flour) then we will need more water
and if we use a normal flour (like today) with half water (flour) and a little more will
be enough. Then we will knead. If we have a great mixer because we will not have
to do much. If we do not have the only thing we will do is stretch the dough and pick
with the palm of the hand to get a dough that does not stick to the hands or the table,
it is a thin and elastic mass. Between 5 and 10 minutes will be more than enough. It
will not be necessary to flour the table. Then let's leave the covered dough to
ferment. The goal is to double the volume. And that when it does? The answer is
simple, if it is cold it will take longer than if it is hot. Or on the contrary, if it is hot it
will take less. The better the masses the longer it takes better because the dough
develops in a different way, but with our pizza without complications, it will not matter.
We leave it and when it goes up to double we will continue with the next step. Now
that our mass has grown enough we can continue. We take the dough and degas it,
that is, we knead it slightly so that it returns to its initial volume. We can move on to
divide it to make small pizzas or make a big one. To stretch it without complications
