TITLE: BUCHI Buchi with a twist of moringa powder and chocolate syrup
Butsi or butchi is the Filipino version of the Chinese's treat Sesame seed ball, a
deep-fried sweet made from glutinous rice dough that has been filled with red bean
paste or ube halaya. The most famous establishment that serves this in the Philippines
would be Chowking. It is a Chinese fast-food chain owned by the largest local fast-food
company in the Philippines, Jollibee corp.
I. INTRODUCTION
A.) PROBLEM & HYPOTHESIS
Problems:
1) How to have a new look to the traditional buchi?
2) How to improve nutritional value of buchi?
Hypothesis:
1) By adding mashed potato flakes, buchi is crunchier and not soggy.
2) Moringa is one of the most powerful health-enhancing plants. Adding moringa powder
in buchi improved its nutritional value.
B.) SUB PROBLEMS
1) What is the alternative filling for buchi? Chocolate syrup
2) What nutritious food can be added? - Moringa powder
C.) SIGNIFICANCE OF THE STUDY
Developing a new look and taste of buchi with more nutritional value will be beneficial in
our health. Since, its one of the favorite foods to eat by the Filipino; we can enjoy buchi
with the chocolate syrup filling and the same time with a nutritious moringa powder.
Moringa sometimes described as the miracle tree. Moringa leaves are loaded with
vitamins, minerals, essential amino acids, and more. One hundred grams of dry moringa
leaf contains: 9 times the protein of yogurt, 10 times the vitamin A of carrots15 times the
potassium of bananas, 17 times the calcium of milk, 12 times the vitamin C of oranges,
25 times the iron of spinach. This research is promoting healthy foods without depriving
to delicious foods.
Filipinos alike, local restaurants which are sometimes not even Chinese and fastfood
chains such as Chowking have added the delicacy to the menu. Aside from the usual
lotus and red bean paste, non-Chinese and indigenous ingredients have also been used
for variety such as ube-flavored butsi.
B. FOREIGN STUDY
In china, Buchi is known as Jian dui. It is a type of fried Chinese pastry made from
glutinous rice flour. The pastry is coated with sesame seeds on the outside and is crisp
and chewy. Inside the pastry is a large hollow, caused by the expansion of the dough.
The hollow of the pastry is filled with a filling usually consisting of lotus paste or
alternatively sweet black bean paste or less commonly red bean paste.
Origin
The origins of jian dui can be traced back to the Tang dynasty as a palace food in
Chang'an, known as ldui. This food item was also recalled in a poem by the Tang poet
Wang Fanzhi. With the southward migration of many peoples from central China, the jian
dui was brought along and hence became part of southern Chinese cuisine.
Hong Kong
In Hong Kong, it is one of the most standard pastries. It can also be found in most
Chinatown bakery shops overseas.
India and Sri Lanka
In Tamil Nadu and North-East of Sri Lanka, it is known as Ellu Urundai or Ellurundai. The
local word meaning: sesame ball. It comes with different sizes and colors. It is usually
filled with sesame seeds, jaggery or sugar and glucose syrup.
Indonesia
In Indonesian cuisine, it is called onde-onde, filled with sweetened mung bean paste.
This pastry is also popular and widely available in Indo (Eurasian), Indonesian and
Vietnamese outlets in the Netherlands. A similar dish is called Klepon, which are rice
balls filled with palm sugar.
Japan
In Japan, it is known as goma dango (, sesame dumpling). It is often sold at street
fairs, in Chinese districts, and at various restaurants.
Malaysia
It is known as kuih bom, which is usually filled with shredded sweetened coconut, or
nuts. Occasionally, it may be filled with red bean paste.
Among the mainly Hakka-speaking ethnic Chinese in the state of Sabah, jian dui is more
commonly known as 'you chi'
Vietnam
In Vietnam, two very similar dishes are called bnh cam (from southern Vietnam) and
bnh rn (from northern Vietnam), both of which have a somewhat drier filling that is
made from sweetened mung bean paste.[8] Bnh rn is scented with jasmine flower
essence (called mali in Thai).
Bnh rn can be sweet or savory. The sweet one is filled with mung bean. The savory one
is filled with chopped meat, cassava vermicelli, mushroom, and a variety of other
typically Vietnamese ingredients. It's usually served with vegetable and dipping sauce.
III. METHODS
A. MATERIALS
Mixing bowl
Measuring cups
Frying pan
Tray
Tweezers
Ingredients
500g glutinous flour
1 cup rice flour
1 cup sugar
2 cups water additional cup when needed
2 tbsp of baking powder
2/3 cup mashed potato flakes
1 tsp of moringa flakes
1 tsp of moringa powder
Sesame seeds (no exact measurement)
Cooking oil for frying
Chocolate syrup for filling
B. PROCEDURES
1) Pour the 2 cup of water in mixing bowl.
2) Dissolve 1 cup of sugar in water
3) Add 1 tsp of moringa powder
4) Add 2/3 cup of mashed potato
5) Add 2 tbsp of baking powder, mix till it dissolves
6) Mix well together
7) When the dough is bit dry, add the additional cup of water
8) Knead the dough
9) Continue till the dough is consume
10) In adding the filling, flatten the ball in your hands, put 1 tsp of chocolate syrup
then seal it and
It and form again into a ball
11) Roll the filled ball in sesame seeds in generous amount
12) Dip fry balls in heated oil in a pan, the pan should be crowded
13) Fry till golden brown and until the balls float
14) Drain the excess oil

V. CONCLUSION AND RECOMMENDATION
An unhealthy diet fails to provide your body with the correct amounts and types of
nutrients for maximum health. Today people have unhealthy diet, eating unhealthy foods
and processed foods that can lead them in poor nutrition. And poor nutrition can cause
to many different diseases.
Buchi is one of the favorite food of Filipinos, now we can enjoy the new twist of buchi
with its new look, taste and nutritious value. We can improve our nutrition with adding
moringa powder in our recipes, particularly among children without depriving to tasty
foods.
