Veuve Clicquot, Ponsardin Yellow Label Brut, France, NV

Brut Yellow Label looks beautiful: golden-yellow, with a foaming necklace of tiny bubbles. Pleasing to the nose: initially reminiscent of white fruits and raisins, then of vanilla and later of brioche. Note the fine balance between the fruity aromas coming from the grape varieties and the toasty aromas following the ageing in the bottle. The lingering aromas echo and re-echo, with each fruit or spice note. Veuve Clicquot Brut Yellow Label manages to reconcile two opposing factors forcefulness and finesse; and to hold them in perfect balance. Makes it ideal as an aperitif, and perfect as the Champagne to enjoy with a meal.

Dom Prignon, France 2003 (1)

Beautifully buttery and toasty, with a tight, floral mineral edge that has a lime-peel freshness. Tightly defined. On the palate the mousse is racy and fresh - that impression of tightness and youthfulness continues. There's a hugely decisive core of lemon and red apple acidity. There's a hint of Ogen melon too and the gentle smokiness and buttery toast is there, wonderfully tight and fine. Acidity is relatively low, giving this a breadth in the finish, but that doesn't blunt its assertive, defined clarity and precision

PINOT GRIGIO / PINOT GRIS Organic Pinot Grigio Pavia, Vinuva Italy
Made using organically grown grapes, this wine is refreshing and fruity with lovely pear and apple notes Grapes are notoriously difficult to grow organically without the use of synthetic herbicides, fertilisers and pesticides: their thin skins and sweet contents are a target for many vineyard pests. However, that is exactly how the grapes were grown for this light, delicate, apple flavoured wine

Chassagne-Montrachet Louis Jadot 2006

The white wines of Chassagne Montrachet are the most robust of the Cte des Blancs, becoming less delicate and more straight forward as one progresses southward from the Grand Cru vineyards at the Puligny border. Chardonnay is the only grape variety used for the white wines. Maison Louis Jadot vinifies the production of growers in this commune with whom they hold purchase agreements based on the quality of the fruit each year. This traditional vinification in oak casks for 12- 15 months brings forth the rich, plump fruit and full body of the wine, which shows a vigorous, aromatic bouquet and persistent, earthy finish. These great wines should be kept for special meals : foie gras, entres and fish in cream sauces, fine charcuterie and white meats in rich sauces.

The pope in question was Clement V. Chateauneuf-du-Pape stands out among the appellations of France for the unusually long list of grape varieties that are permitted for use. There are 13 sanctioned varieties but as many as 18 are cited in some AOC documentation, in stark contrast to the northern Rhone appellation of Hermitage, which allows only three. Grenache is the king of these grapes and arguably produces better wine here than it does in any other part of France.

Ruffino Vin Santo del Chianti Serelle 2007

A leading Tuscan winery, Ruffino has over 130 years of excellence in fine winemaking, and history thats just as impressive as whats in the bottles they produce. Ruffinos Serelle Vin Santo del Chianti is a delicious dessert wine with beautiful amber and deep golden hues. Luscious aromas of candied fruit and honey with a touch of orange peal, pepper, and cinnamon. A perfect compliment to mascarpone based desserts, crme brle, biscotti, or simply enjoyed on its own. The grapes for the production of Serelle are carefully chosen in the vineyards during harvest. The bunches are slowly dried in the vinsantaia, a milieu characterised by a natural and constant ventilation. This process lasts until the beginning of December when the best bunches are chosen and vinified. After having been destemmed and softly pressed, the most which is thick and honey-like because of the high sugar concentration, is fermented in French oak casks at a controlled temperature. The fermentation continues very slowly until the month of March when the right alcohol/sugar balance had been reached. Serelle is refined in the small oak casks (with oxidising process) for approximately 3 years. After the blending of the casks and a brief resting period in stainless-steel vats, Serelle Vinsanto is then bottled
