Ingredients: 2 Tablespoons active dry yeast dissolved in cup warm water c brown sugar, 1 teaspoons salt, cup olive

ive oil or melted butter, cup hot milk, combined and cooled 2 large or 3 medium eggs, slightly beaten 2 cups flour 3 cups oatmeal Procedure: 1. Prepare the yeast-water mixture. 2. Combine the brown sugar mixture with the slightly beaten egg. 3. Add the 2 cups flour. Blend well. 4. Add the yeast-water mixture. Blend well. 5. Add the oatmeal. Blend well.

6. Transfer to a greased bowl and cover with a damp but not dripping very clean kitchen towel. 7. Let rest 10 minutes then knead for about 10 minutes. 8. Transfer to the greased bowl, and brush the top with olive oil or butter. 9. Cover with the damp kitchen towel and place in a warm place to rise for

about an hour. (I like putting it inside an unheated oven). 10. Grease muffin pans with olive oil or butter. 11. When double in bulk, spoon dough into the pans. 12. Leave to rise for about 15-20 minutes. 13. Preheat the oven for about 5 minutes. 14. Brush the top with egg or milk to give your bread a nice finished sheen. 15. Bake in medium high heat for 10 minutes. 16. Rotate the pans and bake for another 5 minutes. 17. Remove from oven, remove from pans and cool.
