Typical Solutions, such as a centre tapped 240V Delta leg, called the lighting tap can only provide 5% of the Transformers KVA rating for each of the two 120V outputs, thus only suitable for small amounts of 120/240V. Simply using a 3-phase Transformer can provide 120V, but not 240V, the high voltage ends up at only 208V supply, even lower when it gets to equipment such as Air-conditioners, which can be damaged by low voltages. Both of these options can seriously unbalance Generators. The Better Solution for 120 / 240V from a 3-phase supply Is to use 3 Standard, Off-the-Shelf Single phase 240x480-120/240V Transformers. Arranged for the typical 3-phase Delta Input of 480V or 240V as available. But the 2x three Secondaries, interconnect in a simple but special way, that not only provided true, proper 120 / 240V 3-wire supplies, but also balances all 120V and 240V equally across all three supply phases. This allows as much 3-phase supply % as the 120 / 240V load requires. This is very good for Generators. This also maintains simple, standard 120 / 240V Distribution board layouts. Modern Generators have been doing this exact same thing for over 20 years.
