To make you'll need: 2cups sugar, 3/4cup softened butter, 1/4cup vegetable oil Cream these together until light and fluffy. Next add 5 room temperature eggs, adding 1 at a time. Mix in 1tsp vanilla extract 1tsp coconut extract and 2 drops rum extract. Sift in 2cups AP flour with 1tsp baking powder 1teaspoon baking soda and 1/2tsp salt. Stir dry ingredients into batter then slowly drizzle in 1cup Buttermilk until just combined and fold in 1/2cup coconut flakes. Divide batter into 3 prepared 8 inch pans and bake at 350 degrees for 30 to 35 minutes. To make frosting mix together 1 stick softened butter, 8oz softened cream cheese, 4cups powdered sugar with 2 to 3 tablespoons of heavy cream and 1tsp vanilla extract 1tsp coconut extract. Mix 1/2cup chopped pecans with half the icing and use for the filling. Use remaining frosting to frost the cake and Garnish with more coconut flakes.
