Air Fryer Zucchini Cheddar Tots || Healthy Snack Idea
15min · 20 servings RECIPE: • 2 zucchinis, shredded • 1 cup panko breadcrumbs • 1 cup shredded cheddar cheese • 2 eggs • 2 tsp Italian seasoning • 1/2 tsp onion powder • salt + pepper to taste Use a kitchen towel to squeeze out as much liquid from the shredded zucchini as possible. You should have 2 packed cups of shredded zucchini afterwards. Add zucchini to a large bowl along with the remaining ingredients and stir until incorporated. Scoop out 1 tbsp of the mixture and form into a small log shape. Place onto a parchment lined air fryer tray or baking sheet. Repeat until all zucchini tots are done — it should make about 32. Spray the top of the tots with a bit of cooking spray. Air fry (or bake) at 400 for 15-18 minutes or until golden.
