Look no further than Thai green curry. The aromas from garlic, ginger, lemongrass, chili, and lime zest. The spice from cumin, coriander, and fennel seed. The richness of creamy coconut milk combined with savory miso paste and sweet date syrup. And while the curry packs a flavorful punch, the lightness of the broth and citrusy notes from the lime juice help to brighten the dish without compromising on its well-rounded flavor. Basically what I’m saying is that this dish is the 💥 💣💥 ingredients 1 tbsp cumin seeds 1 tbsp coriander seeds 1 tsp fennel seeds 1 small white onion, thinly sliced 3 green onions, thinly sliced 8 cloves garlic, minced 1 2-inch piece lemongrass, thinly sliced 1 2-inch piece ginger, thinly sliced 1 Serrano chili, thinly sliced 6 cilantro stems, finely chopped 2 limes, zested and juiced another 3 cloves garlic, minced 1 heaping tbsp miso paste 1 heaping tbsp date syrup soy sauce to taste 3 cups veggie broth 1 can full fat coconut milk 1 small bunch snap peas 2 cans chickpeas, drained and dried cooked short grain rice extra green onion, cilantro, and thai basil for topping sesame seeds oil, salt, & pepper as needed. prep preheat an oven to 325. add cumin, coriander, & fennel to a tray and roast for 5 mins. grind spices with either a mortar + pestle or coffee grinder. add spices to a food processor with all ingredients from white onion through lime zest. blitz until it turns into a paste. add paste to a cast iron pan over medium high heat with 2-3 tbsp oil. cook down 2 mins. add 3 cloves garlic, miso paste, date syrup, and about 1/2 to 1 tsp salt. stir in and cook down 2-3 mins. pour in broth and coconut milk. stir in and reduce for about 4-5 mins. optionally transfer curry to a blender and blitz until creamy. serve with rice, chickpeas, green onion, cilantro, thai basil, and sesame seeds. enjoy, my friends 🙏 #veganrecipes #thaigreencurry #summerrecipes | Vegan Scratch Kitchen | CHRISPY · Feel Good

Place a deep frying pan over medium heat, add oil. Finely dice brown onion and garlic, then transfer to the pan and fry for 2-3 minutes�2. Add soy sauce, gochujang and white miso paste and fry for a further 1-2 minutes. Then, add water, peanut butter, veggie stock powder and soy milk and mix together well. Reduce to low-medium heat and leave to simmer whilst you prepare the rest of the meal�3. Cut firm tofu as desired and cut kernels off the corn cob, then transfer to a seperate frying pan with oil and broccolini. Fry for 4-5 minutes, rotating the tofu and broccolini to cook both sides, then remove from the heat�4. Cook your choice of noodles as per the packet instructions, then drain and get ready to serve�5. Crispy Rice: * 1 1/4 cup sushi rice (short grain). * 1 2/3 cup water. * 2 tbsp rice vin. * 1/2 tbsp sugar. * 2 tbsp potato starch. * Pinch of salt. * Kombu strip (optional). Eel Sauce: * 1/3 cup tamari. * 1/3 cup cane sugar. * 1/3 cup mirin. Spicy Tuna Bites: * 10-12 oz ahi tuna. * 3 tbsp Japanese mayo. * 1 tbsp sriracha. * 1/2 tsp sugar. * 2 tbsp chives + more for topping. * 12-14 serrano or jalapeño slices. * 12-15 avocado triangles. * Avocado or olive oil for frying. Directions: 1. Cook your rice in a rice cooker with the water, kombu and pinch of salt. 2. Mix the sugar and rice vinegar well. Add it to the rice along with the potato starch and mix really well. 3. Cover a container with plastic wrap and press the rice really well. You want it like 1/4-1/2 inch thick depending on preference. Cover with the plastic wrap, place another container over it with some cans for weight. Refrigerate for 4-8 hrs and then place in the freezer for 30 min. 4. Add the mirin, tamari and sugar to a sauce pan and boil. Simmer for 5-7 min or until it coats the back of a spoon. Let cool. 5. Chop your tuna really finely, almost like a paste. Add the japanese mayo, sriracha, chives, sesame oil, tamari and sugar. Mix. 6. Cut your rice into rounds or squares. This yields between 12-16 depending on the size of your rounds. Mine was 2 in. 7. Cover your pan with about 1/2 inch of oil. Add your rice and fry until golden on both sides. Should be about 8-10 min. 8. Then wash the rice a few times and either cook it in the rice cooker or on the stove in a pot. If using the stove, pour 1 cup of water on the glutinous rice and turn heat on high. Once bubbling, close the lid and simmer until the water has been fully absorbed
