We’ve made Marry Me Chickpeas and marry Me Tofu but this BUTTER BEAN version is most certainly my favorite!

I really feel like we should all be cooking with butter beans far more often!

* 2 tbs of olive oil
* 2 tbs of unsalted butter
* 3 cloves garlic, finely minced
* 1 cup of vegetable broth
* 1 cup of heavy cream
* 1/2 cup parmesan cheese grated (plus more for serving)
* 1 tsp chili flakes
* 1/4 tsp oregano
* 1/4 tsp thyme
* 1/3 cup sun-dried tomatoes, chopped
* 2 cans of butter beans or other beans, drained and rinsed
* 1 tbs of chopped fresh herbs
