It is so easy to do. I'm just adding some rice to the bottom of a 13 by eight Pyrex baking dish. Then on top of that I have two cans of red enchilada paste. I like the old El Paso kind but you guys can use any kind you want and just combining that with the rice and then mixing it all together and spreading the rice and the enchilada sauce end to end making sure that all the rice is touched by the enchilada sauce because this is what's going to help cook it. Now, I have a few sliced up chicken breast here. I made some incisions in it so that it will help cook evenly and how it'll cook perfectly all the way through and then, just lining the Pyrex dish with the chicken. I cut four thinking that it would be a big enough dish but it definitely wasn't. Then I'm going to add some taco seasoning over the chicken. This is just going to really drive home that flavour profile and make sure everything is well seasoned and delicious. Obviously we gotta hit it with some salt and some pepper. You always want to season everything as much as you can. Over seasoning is possible but in this case it's perfect. Now I like it a little bit spicy. So I'm going to add some pickled jalapenos on top. You don't have to do this but if you like spice and you want a little bit of acidity you can easily do that. Um an alternative here is to use hatched chilis which are slightly less spicy. A little bit more smokey but also have a nice acidity. Now we're going to put this in the oven at 350 for 1 hour. And when it comes out check this out guys. This is so easy and so delicious. Everything is cooked for you. You could see the rice. Awesome. Now, I'm adding some Mexican crema on top of this for a little bit of creaminess texture but you can also use sour cream and then a but a cup and a half of Mexican blended cheese. You could also use cheddar, you can use Colby Jack, whatever and then that goes back in the oven at 350 for another 10 to 15 minutes, just until everything is melted and I'm going to garnish it with some chopped up green onions. You could also use cilantro but I like the oniony flavor a little bit more and then this one serves about 6 people. You could also double that up and make smaller pieces if you're having like a party and cut up 12 pieces. But ultimately this is so easy and so delicious. Check out this cross section guys. It is super fluffy. It's cheesy. It's creamy. We got a little bit of spice from the pickled jalapenos. Awesome cheese pull. Putting that on a plate. This chicken and enchilada is just so easy. Look how perfect the chicken is. Oh my goodness. It's cooked unbelievably. This dump and bake enchilada rice and chicken. It's just so good. I can't believe how easy the chicken was to cook. And the rice. Really you just like throw everything in that casserole dish. And it turns out perfect every single time. It's just so good. Wow. Super cheesy. We got the spice from the jalapeno. Again the rice mixed with the enchilada. Perfectly cooked.

One Pan Mexican Rice Meal #cook #easyrecipe | By Janice’s Kentucky Kitchen | Today, I'm making a one-pot Mexican rice meal for my family. Uh I've got it's between a pound and a pound and a half of ground beef and onion chopped up that I'm cooking and you want to cook this until the meat gets done. There's no more pink and then you're going to drain it and I'll be back after this gets cooked. Okay, you're going to salt and pepper, your meat and onion to your liking. So, I'm just going to add some in there and then if my family wants more, they can add it. I've got heat down a medium high with four. We're going to add I gotta read this. A teaspoon of garlic powder. We got two tablespoons of taco seasoning. A cup of long grain enriched rice not cooked. A cup and a half of beef broth. We got a fifteen point two five ounce of corn drained. What I like about this is you can make this in one pan. Don't have to get a lot of pans out. Okay, we're going to take one cup of tomato sauce and a half a cup of salsa. Now, this is easy. Y'all can put this together. We're going to stir all this up. It's already smelling good y'all. Makes that all look in there good. Now, if y'all want to add you some black beans, you you go ahead, you make it the way you want to make em. This is just how I make it for my family. Nothing is set in stone on recipes. You all can make em your own. Experiment with them. Okay. Now, what we're going to do, we're going to bring it to a boil. I'm going to turn it up a little, get it to a boil and then, we're going to cover it and we're going to simmer it for 18 to 20 minutes or until that rice gets done in there and after all that gets done, we're going to top it with some cheddar cheese shredded and but I'll show you all that after it gets done and I know somebody's going to ask me if you can use cooked rice. You probably hood. You're not going to have to simmer it as long but I think by simmering that that long to get that rice done that it's going to let those flavors just all mix together in there. So, going to turn it down. You're going to cover it up and I gotta get the lid out and we're going to let it simmer and when that rice is done, I'll be back. Okay, our meal is cooked. And you use however much cheese you want. I'm not going to tell you a set amount because we love cheese and you want to cook your mixture on like a medium simmer like number three on my gas stove. I've got the burner turned off right now. Then, I'm going to cover this up and let it sit. Oh, there's a big piece of cheese. Okay. Let me pull that out there. Okay. What I'm going to do? I left it on the burner but the burners turned off. I'm going to leave that sitting there. I'm going to put about 3 minutes on it and give that cheese time to melt. Okay, we got all that cheesy goodness melted. Oh, So I better dish up my sweet Eric some food and let him taste test it for me. Good idea. Okay I've got some dished up for my sweet Eric. I'm going to let him taste test first before I call the rest of them. Go ahead hon. If I need to fill up again before they come in. I like that. I know some of them's going to put it on taco shells. I love to make this for game days. I love to serve this to my family. It's a great easy dinner. Now, I did put my already brown ground beef in here and that was really important to have already browned ground beef and the seasonings in this smell absolutely fantastic. I wish you could smell them. That taco seasoning that Zataran's rice already. This was the Spanish rice flavor so that already had some different seasonings on it. And then I used my Lipton onion soup mix. It's good in soups. It's good in dips and it's really good in Mexican rice. Okay I think this is looking really really good. I've just got I think that might I'm going to add just a little bit more liquid. Because some of this liquid's going to cook off and we really need this liquid for our rice to cook. So, that's going to be really important to get our rice nice and hydrated and it's so cool that they just cook right in the bottom of the pan just like this. This is going to be just a beautiful, easy, and delicious dinner and what I'm going to do is I'm just going to top this with some cheese. I'm going to come in and I'm just going to top a cheese crust right on top of this whole thing. This is just the great value Mexican blend cheese. And this was a one pound bag and I'm pretty much using this yeah I'm using this bowl bag. So there we go. That looks so good. This is going to taste amazing. It's going to be your new favorite party dish and go to dinner. I'm going to just grab my lid. I'm going to put this onto my crockpot and I'm going to set this on high for 1 hour and then we're going to have a delicious meal. Okay, it's been one hour and our Mexican rice is ready. It smells so good. Those Zataran seasonings that we have in there, that ground beef, that rotel, the black beans. We've got our onions in here, garlic. This is going to be so so good. I can't wait for you all to try this. Okay. Are you Look at this masterpiece. Think this is going to be so oh I wish you could smell this. That onion soup mix like this all just smells so so good. I'm going to add one thing to the top real quick. I've got some green onions. I'm just going to use my kitchen cheers and do some chops of this right on top for a little bit of colour on that beautiful melted cheese. Oh yeah Okay that looks great. I've got myself a bowl here. We're going to dig in. I'm going to show you how that rice just cooked perfectly into the crockpot. I'm oh yeah. Look at that. Oh my gosh. Look at that. Ooh. This looks so good. That cheese right on top there. Oh my goodness. Okay and I've got one thing I'm going to add to this. I've got my daisy here. We gotta do a little dollop of daisy. I love this squeeze bag.
