Yes, Alan Menken and Stephen Schwartz (the latter who worked with Idina Menzel before on the Broadway musical Wicked) wrote a duet for her and James Marsden to sing entitled "Enchanted". Unfortunately, the song ended up on the cutting room floor. But Menzel is okay with this. According to an interview with her: "Nancy wasn't written with any songs, honestly. Patrick [Dempsey's] character and my character are the New York people, and we don't sing. It was never written that way, and I actually was really flattered to be hired as an actress." Jodi Benson, who provided the voice of Ariel in The Little Mermaid (1989), appears in three scenes as Robert's secretary, Sam. Incidentally, during one of her scenes, when Giselle looks into the fish tank, you can hear a muzak version of "Part of Your World" from that movie.
Paige O'Hara, who provided the voice of Belle in Beauty and the Beast (1991), appears in the soap opera that Nathaniel and Prince Edward (though mostly Nathaniel) watch. She plays a character named Angela (named after Angela Lansbury, who played Mrs. Potts) and is speaking to a man named Jerry (named after the late Jerry Orbach, who played Lumiere) and one of them mentions a character named Ogden (named after David Ogden Stiers, who played Cogsworth). In the background of that soap, you can hear the title song from "Beauty and the Beast". The scene itself is reminiscent of the bandaging scene from that film.
As for Judy Kuhn, who provided the singing voice of the title character in Pocahontas (1995), she has a very brief one-line cameo. She plays a pregnant woman with kids who lives in Robert's apartment building. She is the first resident to be visited by Prince Edward. When he opens the door, she just says, "You're too late."

Amy Adams and James Marsden did all their own singing for the film. Adams has a background in musical theater and Marsden has sung before in such works as "Ally McBeal" and the recent movie version of the musical "Hairspray". The only character whose singing voice was dubbed was the Troll. The speaking voice was provided by Fred Tatasciore, while his basso profundo singing voice was provided by Wilbur Pauley.
In February 2010, Variety magazine announced that Disney has given "Enchanted 2" the green light. As of that article, Barry Josephson and Barry Sonnenfeld will return as producers, Jessie Nelson and Anne Fletcher are attached as screenwriter and director respectively.
Disenchanted (2022) is expected in 2018. Amy Adams will reprise her role as Giselle; the rest of the cast have not been confirmed.
